My favourite is Mario Kart Wii, because of the amount of time I have put into it online, and it was the first Wii game I had (along with Wii Sports) when I got it just under 6 years ago. Will be a shame to see the online servers go down... It would be Mario Kart 7 if it wasn't for all the glitches when it first came out ruining online, the lack-luster roster, and the lack of a single-player VS mode.
Played all of the Mario Karts. Only own MK7, MK64, SMK, and MKSC.
DD is okay, but I find it to be slippery. Wii is really good and I wish I had the cash to get it now. DS is also really good, but I have 7, so...
My favorite is MK64 on nostalgia. I played it whenever I went to my cousin's house. It's not the best by a long shot, but those memories give it a boost.

Double Dash!!, no contest. It's the most carefully designed of all Mario Kart games. It doesn't rely on gimmicks (like gliders or antigravity), it offers a long-lasting challenge by inclusion of Championship Mode, it allows the player to race on tracks with a changeable amount of laps, and it has the tightest controls of them all.
But what makes this game so much superior to every other entry, is that characters aren't just fillers. Due to every character having an exclusive item alongside their respective weightclass, and having two characters at once, characters actually mattered here. And while the balancing of these special items was rather flawed, it still offered a more intricate meaning to choosing your character. Even today, Double Dash!! is the only game to offer tactical and unique value to every character, and that's also why DLC for MK8 is just pointless.

The special items and dual racing was great in concept. But terrible in execution.
The triple shells and Golden Mushroom were converted into special items, and Boos were straight up removed, making the stock item roster horribly slim. Like you said the special items were incredibly unbalanced as well. Certain items were literally incompatible with certain weights.
All of this placed severe restrictions on the characters that you would want to pick, and with the dual racer concept, picking characters in multiplayer was utter hell. If you didn't pick your character fast enough, you were far more likely to be stuck with either bad special items or a weight class you didn't want. Double Dash should have taken the route fighting games take, allowing multiple players to pick the same character with different skins.
In regards to the dual racers, it just didn't add much if you ask me. It's an example of poorly designed assymetric multiplayer, where one player does most of the work, and the other player does very little.
Also, I wouldn't call the controls tight. I'd use that word to describe MK Wii, 7, and 8, but definitely not Double Dash. I went real-life Go-Karting with friends once on a race track that was really slippery, and it was hell. Double Dash felt like a similar experience. Karts felt like they had zero traction.

@iKhan True, the limited selection of characters made it difficult in multiplayer to leave everyone with a preferred team, but that's even more of a reason MK8 should've incorporated unique traits for characters - not necessarily special items, though. I mean, the MK8 roster is exploding by now, but all that does is overload the weightclasses and make characters practically meaningless, and DLC only makes it worse. I, for one, never would've taken such a hostile stance against Link in MK8 if he (and every other character) had a trait that separated him through more than just the weight class - something like an ability.
Or, in other words, picking your favourite character loses its uniqueness once you discover that 4-7 other characters with the same vehicle play identically just for being the same overall weight. Giving every character a sub-mechanic that at least sets them apart from others of the same weight class would encourage more experimenting.
But, that's just my view on it, and I doubt Nintendo will revisit such an approach anytime soon, since most players complained about item balancing (Bowser Shell = massacre).
Wii motion controls were great, I played this game at least 80% of the time with motion control. Wii I think has my favorite tracks and tricks and bikes were all great additions. I thought it looked great when it came out but mastering it was brutally difficult. I only ever got to one star which was much harder than simply finishing in first every race. The only thing that ruined MK Wii was all the dang cheating hackers playing online.

Wii was the best selling version by far. I really only like the SNES version when it was the only one. I have liked everyone since the DS version. Don't really care for Double Dash, 64, or Super Circuit but I played those retroactively and not at release.
1. Mario Kart 8. It's by far the best in the series. The tracks to me are the most fun to play. The controls are spot on. There are a ton of characters and Karts. The best music in a Kart game too.
