well yeah, but the 3D Mario team has had a year so far, and some of my favorite games ever have only needed 2 years or so.
Super Mario Galaxy was ground breaking when it came to evolutionizing the genre. That development cycle nearly lasted five years. The Wii U entry should last around that long as well.
Besides, we need a long overdue break from Mario. I'd like for Nintendo to finally end the "Mario every year" trend that started in 2009. The next Mario-type games I want to see between 2013-2015 is the next Mairo Kart, Mario Party 10 perhaps, and a Yoshi's Island game.
Other than that, I want the next main series Mario game to take its time developing. Mario's in HD now, and with the Wii U there's so much potential. I have really high expectations. Blow Galaxy out of the water, if its possible.

Halo attempted to do a spin-off title as a strategy game. It unfortunately didn't mesh well with a good portion of the fans, who demanded more FPS action.
I'd love to see a COD racer because that sounds incredibly epic.
Also, for "So Bad It's Good" COD Spin-offs, Call of Duty Party 1-9 anybody?

I want a true sequel to Super Mario 64. Tons of open-world exploration, but with interconnected worlds. The worlds should feel so huge and deep that you could see them for miles away. Of course, the visuals should be top-notch. I'd like to see more interactions; there should be settlements and kingdoms with citizens as well as a new character that replaces Rosalina. I'm not hoping for an extremely deep story, but something like Galaxy 1's story; it wasn't too complex, but had an opening that really hooked the player. Co-op with the gamepad is a must, as it's never been done in a 3D Mario platformer. Boss battles really need to be improved IMO; hearing baby bowser and kamek whining every time you attack can get annoying fast; they need to be a little more serious; I really liked the bowser battles in SM64, but even those could be more challenging.
Personally, I'd like to see fewer references to the older games; this should be original and not reliant on such references. I think it would be awesome if a Bowser boss fight could take place in a typical map; it would be so unexpected, as every other Mario game practically tells you when you're going to fight Bowser. That's basically what I would like to see: out-of-control changing of the formula that we've all grown so used to. I think it's a great opportunity for Nintendo to really surprise us!

Oh, and on-topic, I fall under the category of people who would like to see an open-world version of Mario. Similar to Super Mario 64, but you can actually travel across the entire Mushroom Kingdom. And there could be warp pipes or a whistle that can transport you to different areas
Really, what I'd like to see, is a game that takes heavy influence from Super Mario Bros. 3 and Super Mario 64, while also having the influence of all the other Mario games and something that makes it feel new. I feel that an open world would help make Mario feel new, because even though open worlds are nothing new, it would be new for a Mario game and it would be a cool to see the entire Mushroom Kingdom connected like that.
Would it be going to far if it even took on some RPG elements?

Well "Mario Canon" is what people mean when they say "Mario Game". If you're going to start calling things like Mario Tennis a Mario Game in the context of this thread then I should probably start calling Guitar Hero and Skylanders "Call of Duty" games. There has been a Call of Duty every year since 2003 except 2004 all of them games in the same genre in the same style and with the same label. What you said is less true of "Mario" than it is of CoD. Fact.
If Super Mario Galaxy 2 could pass off as a 360/PS3 game (if it were in HD), I expect some great things from Nintendo.
