There's not one Zelda game I haven't at least tried that is canon. Otherwise it would be the CD-i games, the Sattelaview games (which you can't play anymore anyway) and Tingle's Rosy Rupeeland.

I've only missed three main entries in the series:

Zelda 2 - Played this one, but never got around to finishing it. Maybe someday.
Four Swords Adventures - Getting around to this one might be a bit of a hassle, especially because I don't even own a copy of the game.
Spirit Tracks - I actually plan on starting this one sometime in the next few days.

For saying it's probably my favourite game series, I've missed quite a few (which certainly raises the question of whether I can call it my favourite series).

Of the big budget games, I've missed Twilight Princess.
Of the smaller games, I've missed the Oracle games, Zelda 1 & 2, Links Awakening.

And I've played the majority of, but haven't completed, Spirit Tracks and Skyward Sword.

It's dangerous to go alone! Stay at home.

The Legend of Zelda - I have and beat it on Gamecube (Collector's Edition) and Wii VC. Have now upgraded to the Wii U VC version to finally complete GAME B.

Zelda II: The Adventure of Link - Same as above, except it doesn't have a GAME B, but I missed a few minor things. Will 100% complete it on Wii U.

A Link to the Past - 100% Completed it on SNES (copy is gone), 100% completed it on GBA, 100% completed it on Wii VC, and now have it on Wii U VC,

Link's Awakening - 100% Completed it on Game Boy. Have the 3DS VC version of Link's Awakening DX, but I rarely touch my 3DS and would prefer playing it on a big screen (Wii U).

Ocarina of Time - 100% Completed it on N64 and Gamecube. Also 100% completed Master Quest on Gamecube. Don't have 3DS version.

Majora's Mask - 100% Completed it on N64 and Gamecube.

Oracle of Ages/Seasons - Beat on GBC. 99% (missing a few rings)

The Wind Waker - Completed it on Gamecube 100% multiple times. Also completed Wind Waker HD 100%.

The Minish Cap - Beat it on GBA, completed it 100% on Wii U VC just recently for the first time ever.

Four Swords Adventures - Completed 100%.

Four Swords Anniversary Edition (DSiWare) - I don't know. I think I got everything.

Twilight Princess - 100% it on Wii.

Link's Crossbow Training - 100% Platinum Medals

Skyward Sword - 100% normal mode. Stopped hero mode because of other games. Will pick up hero mode later to 100% it as well.

Tingle's Rosy Rupeeland - 99% Missing one hidden character. Maybe checking a guide after all this time. Amazing game btw.

Phantom Hourglass - I think I got everything except 1 Golden Ship part.

Spirit Tracks - Got everything except 1 Golden Train part.

A Link Between Worlds - The only original Zelda game I don't have (in any form).. yet.

I have beat every Zelda game except the original Zelda, Zelda 2 (I prefer the modern Zelda games)
Oracle of Ages/Seasons (Not so fond of GB zeldas)
And I've started both Phantom Hourglass and Spirit Tracks, but I hated the touch control and the ocean king temple, so I gave up on both

I keep seeing this topic pop up and avoiding it like the plague for some reason. Can't figure out why but here it goes!

The only ones I've never finished are 3 Majoras Mask and both Orical games.

The reason I never play the Orical games in there original format was because I dismissed them as not being true Zelda games because of who made them. I owned one of them and for this reason I hardly played it and eventually never played it past the first hour or so. I own both now and have seen the error of my ways but haven't gotten around to beating them yet.

As for Majoras Mask, I don't know really why I've never beat it. It's a good game and I guess in its original form on the 64 I had bought something else and put it in the system. Some times that's the death of a game for me as I don't feel like starting all over again because I forgot where I left off. I wasn't terribly far into the game but close to 25% of the way and that was enough for me to not start it up again. That's why I'm waiting for a 3ds or hd remake because I will be really upset if I beat the Wii VC version then they finally release a remake!

I've played, but never completed, the first two Zelda games because they're quite hard. I've yet to play Majora's Mask, Twilight Princess, and Skyward Sword because OoT put me off 3D Zelda games for quite a while. Also, I've never played Minish Cap, as I was a late comer to the whole GBA scene.

Oh, and I've never played Spirit Tracks. I intend to rectify that one day.

CDi, Link's Awakening, Minish Cap, the Oracle games and Spirit Tracks I've never owned. Skyward Sword I got bored very early on (only completed the first dungeon I think), currently working through A Link Between Worlds and waiting for a non-glitchy version of Majora's Mask (have it on Wii VC and GC collectors edition but both are rather buggy). The others I've completed and currently after Arbiter's Grounds in my latest Twilight Princess playthrough.

I will return to Skyward Sword soon to give it another try especially as Hyrule Warriors will probably have plot spoilers for it.

EDIT: Forgot Minish Cap existed.

The original Legend of Zelda really isn't that hard until you get to the second quest. I beat the first quest regularly.

I still rank the orginal as my favorite top down Zelda. This was beaten with awesome Nintendo power maps and trading info on secrets on the playground. This game was just as revolutionary as Ocarina of Time as it was the first game that let you save with out having to deal with super annoying passwords. This allowed for an entirely new gaming experience that I think has aged better than Ocarina. The combat in Zelda is awesome....I was really good and used to get through the first quest with out even dying. The introduction of the mechanic where you block with your shield unless your attacking and the variety of enemy movement and weak spots is all masterful.

The second quest is brutal in its difficulty and some of the secret locations and passages are confounding to figure out with out help. What the hell after beating the game and like the first 3 dungeons on the second quest you have to figure out that if you press up against one specific wall in the dungeon for a few seconds that you will magically walk through it....good luck figuring that out on your own with out being stuck for quite awhile.

Skyward sword is my favorite 3D zelda and Phantom Hourglass is my favorite handheld....no strike that Link between worlds actually.

I found Return of Link hard to get into due to the very different gameplay whilst (advance warning of breath loss) I never finished Majora's Mask. The wierd save system saw me loose many game progress on my cousin's copy whilst the version on the GC Collection disc was too unstable. If it comes to the Wii U VC I will buy it (if I can be guaranteed its stability).

I really hope that if Majora's gets a remake they change the save system.

The save system isn't bad in Majora's Mask. It was actually worse is the Japanese version. Come the Wii U VC version, there will be restore points and suspend saves to help, but they won't revamp the actual game (save that for the anticipated 3DS version!).

As for its stability, it'll be a lot better, like it was on the Wii VC.

I just never realised owl saves were the equivalent to quick saves and would delete after being loaded up.
