@Jaz007: Honestly its been awhile since I played the game but I do remember reading that the Wii version had all the stuff that the Sith Edition had that's why Wii never got the Sith Edition. I can't really compare it though since I never played the PS3 or Xbox versions. This is just based on what I have read and heard from people.

1. TIE Fighter (one of the best games of all times)
2. Force Unleashed (Wii) (one of the best motion controlled games, agree, it is great)
3. Rebel Assault (loved getting high scores and passing all the stages with friends, using a nifty joystick at the time)
4. Dark Forces (really fun FPS)
Wanted to love the GC games. Currently trying. And thinking about playing the SNES games.
Rogue Squadron 2 - Rogue Leader recaptures the films better any of the games I've played. Graphics still look lovely. Challenging but fair. A lot like EA's LotR games from that gen.
Honourable mention: Lego Star Wars 2

KOTOR 1+2 obviously. The Rogue Squadron games are great too.
HD versions would make me very happy. As long as the bugs and glitches are fixed too of course.
I'm not much into Star Wars, but it's such a huge franchise that I've played a few of it's games.
3. Star Wars Episode 1 Pod Racer (N64) - Played this quite a lot as a kid, but I'm not a huge racing fan, so I can't say it left a huge impression on me.
2. Super Return of the Jedi (SNES) - This was a very fun game, but I never got passed the third level (well, I did, but I honestly don't remember anything after that), so I can't list it higher.
1. Star Wars Starfighter (PS2) - This was my first PS2 game, so I was blown away by it's graphics, and I'm a big fan of dogfighters, so that was a plus.

I haven't play it in nearly 15 years (holy crap...) so I have no idea how well it holds up, but I remember Pod Racer being pretty dang fun at the time. And though I haven't played them in a long time either, I was a big fan of the Rogue Squadron games too.
Someday I'll set some time aside to play KOTOR. I actually bought it on Steam several years ago, but unfortunately my computer at the time could barely run it.

@GuSilverFlame: I will just copy what I posted a few posts back regarding the second one.
Yeah IMO it felt that The Force Unleashed was suppose to be only a one game series however because the first one was such a commercial and critical success they tried to capitalized on a second game. I felt that the story felt complete when I finished the first one and got to the point (just in case you didn't know Force Unleashed took place during Episodes III and IV). All the stuff that made the first one great was bad on the second one. The story felt rushed and was full of inconsistencies, and I don't know about the PS3 or 360 but the Wii they got rid of the motion controls in the second one, so you are stuck with a button masher for combat.
Yeah the first one is great probably in my top 3 of favorite Wii games but the second one yeah, you can just skip that one.

Jedi Academy has, hands down, the best lightsaber combat. Different techniques depending on saber choice, stance and available force powers, I could go for hours with console commands and a good area to fight in.
KOTOR 1 + 2 for great characters and story.
LEGO SW Complete Saga for a fun take on the series
Jedi Outcast and Jedi Academy are both entertaining, and I spent a lot of time with each. I loved playing through the single player on Academy many times with different lightsaber and Force power choices. I also loved playing the multiplayer, although I always played with the AI bots. The three Super Star Wars games on Super Nintendo are also worth playing, although they are quite difficult. I also quite enjoyed The Force Unleashed on Wii. The Clone Wars is another I have fond memories of. It had some fun multiplayer, and it was one of the games we'd always play at family get-togethers.
Honestly, I had the most fun I've ever had with a Star Wars game in SWTOR the MMO. I know a lot of people knock it, but I bought it day of release and had a really good time for a couple months. I don't think I could get into it again, but I enjoyed that more than any other console Star Wars games...
Now, that being said, I've never played KOTOR. I probably never will either unless they make a remaster, I just can't see myself going back to play it if I haven't already. My favorite console Star Wars game are probably Rogue Squadron or Shadows of the Empire for N64. Believe it or not, Phantom Menace for Playstation was a really good game as well.. same goes for Jedi Power Battles. I don't think I've ever really played a Star Wars game that I've disliked.
Oh.. I forgot about Pod Racer for N64. I poured tons of hours into that game unlocking everything. One of my favorite racing games ever and also one of the best scenes from the prequels, a lot of people seem to hate it for some reason but I enjoyed the Pod Racers and all their various pilots.
I always find myself popping Rogue Squadron III in from time to time. In addition to all the regular ship missions, I honestly love the third-person shooting levels as well; they have a fun, arcade-ish feel to them. Also having both Rogue Leader in its entirety for co-op and three old school arcade games were a great distraction as well; RS III really was packed with content!
I still wish Star Wars Trilogy Arcade would've been ported to Wii, like a lot of rail shooters were. The game is basically the "best-hits" of the OT rolled into a frantic, awesome quarter-muncher! I make it a rule that play it every time I see it in an arcade!
I hope we eventually get a game that's like Lego Star Wars The Complete Saga (the one SW game everybody should own!); were you go through all six films and can play as pretty much anyone! Why hasn't this been done yet?

I should probably emphasize that I personally find it overrated; I know lots of people who adore the game. But I've always had issues getting into Bioware RPGs in general. I liked Baldur's Gate and Icewind Dale, and Neverwinter Nights is probably one of my favorite games of all time (but only due to the toolset and and online multiplayer worlds that people created; not the offical campaigns, which I thought were quite bad). However, I found Mass Effect, KotR, and Dragon Age so boring that I've only gotten through the first few hours of each.

Try Mass Effect 3:SE on Wii u. The Game Pad really enhances the game and it's very fun.
