Aviator: Diababa was ridiculously easy, but still epic! Plus, the sub-boss (the larger monkey who helps you with Diababa) wasn't too epic, but I had some trouble! Definitely more trouble than Diababa. (I didn't die, though)
@ wave.... the gba stafy imports are much better. I really enjoyed them. Ninja gaiden is the though the first boss in all the nes games easily fit in this thread.

There were sooooo many. ALot of the bosses from the Megaman series were easy if you knew what their weakness is some of them that come to mind are Heatman, Woodman, Quickman, Shadowman, Topman. Another easy boss for me was Bald Bull in Punchout!! for the NES I would just wait till he did his charge attack and than WHAM!!! down for the count he would go. Than there was Vulcan Raven from Metal Gear Solid. All I did was place landmines down and lured him into them to kill himself.

I have to agree with the first post in regards to Metroid Prime Corruption. All of the bosses were pretty easy in that game. Considering how difficult Ridley and Dark Samus are in Echoes, I expected epic battles. Bowser in NSMB is pretty lame too. Can't forget Toad Man in Mega Man 4. Retu in Final Fight 2 was easier than any boss from the first game.
ALL robot masters in Mega Man 2 are easy IF you are playing on normal difficulty, but anyone who has played it more than once SHOULD be playing on difficult. (come to think of it, they aren't that hard to beat on difficult either)

Hey, don´t go picking on Bowser! His arc of axes actually takes some time getting used to, I wouldn´t call him that easy. And the "fake" Bowsers that breath fire can be quite tricky in the right enviroment.
The first boss in Life Force, "the brain" is so incredibly slow. I´d say it´s one of the easiest bosses.
The final boss of Sonic Adventure 2, "Finalhazard". That stupid lizard isn't that hard. You just hit those gross swells that pop up and go behind him to switch characters when SonicShadow is low on rings. Oh, and do it in 5 minutes or the world is destroyed. Getting the world destroyed is probably harder than beating the boss. Heck, the biggest problem you face is accidentally switching to the other character while he's still low on rings (not that that's ever happened to me before...heh...heh ).
Oh, and Sonic Heroes' boss was pretty easy, too. Most of the other Sonic games had really hard final bosses.
