List your favorite remake(s) that you've played. Note that you don't necessarily need to have played the original to list it here. Also, No ports. Mostly because otherwise I would scare everyone away with a compulsively written wall of text. If you don't know whether something is a remake or not, look it up. Just to get this outta the way, A Link to the Past on GBA is a port, not a remake. Don't put it down. Same with Metroid Prime Trilogy. Yeah, it has some new controls. Whoopdie doo. It's still the same game. If has to have included some sort of significant changes to be a remake. Usually graphically. I'll make excepts for those that are really difficult to call, such as RE4: Wii Edition.
Anywho, here's my list, and I'm actually gonna keep it down to only 10 or so this time...if I can even get that far:
1. Metroid: Zero Mission(GBA) - Let's face it, as good as Metroid was on the NES, it's a bitch to play nowadays. This version combines all the various improvements from the later games in the series, and then some. The end result is one of the best Metroid games, and one of the best games of all time. 2. Ultima 1: The First Age of Darkness(DOS) - I never played the Apple II original, but as far as I can tell, the remake added a bunch of improvements that ended up being one of the best 8-bit era RPGs I've ever experienced. It's tons of fun, and puts a lot of games of its day, and long after, to shame. 3. Dragon Warrior 1 & 2/Dragon Warrior 3(GBC) - The original games were some of the most boring and tedious Roleplaying games I had ever experienced, and was inexplicably mundane compared to all the games it was based on. The remakes, however, completely revamped and rebalanced the gameplay into something that's actually enjoyable, and added a much needed dose of flair and charm. A success story if I ever heard one. 4. Final Fantasy 2: Anniversary Edition(PSP) - Much like the DW games, they took a game that was horrible, and polished it to a sheen. 5. Tales of Phantasia(PSX) - While the original SNES version is still a joy to play, and I riginally found the new gameplay editions and story changes annoying, it did grow on me, and now I'd have to say that it's the definitive edition of a Fantasic game. It started a whole series, the game that turned my opinion of the series 180, and it can still run with the best of 'em. 6. Mega Man Maverick Hunter X(PSP) - While it doesn't necessarily replace the original in my heart, it does change enough so that it's a fresh experience even after having played the original way too much. 7. Castlevania X Chronicles: Rondo of Blood(PSP) - I never played the original Rondo of Blood, but this version is one of the greatest Castlevania games around. 8. Super Street Fighter 2 Turbo: HD Remix(XBLA) - One of the greatest fighting games ever just got better. Now it has a CPU opponent that isn't cheap as hell, and it's even more balanced than the original. Plus it's got online play. You couldn't ask for more! 9. Bionic Commando: Rearmed(XBLA) - It took everything about the original that was great, took out everything that sucked, and added a whole lot more goodness. 10. Pokemon Leafgreen(GBA) - it's the original Pokemon, now with more goodness. What's not to like?
...I figured I'd be listing a lot more, but honestly, I can't say I've found that many remakes to be enjoyable. A game is usually best in its original form.
Definitely Heart Gold. AWESOME game in it's own right, and the fact that it brings back so many childhood memories is great. MGS: Twin Snakes, is good, too, as gren pointed out.

I don't see how Zero Mission is even a remake. It's as much a remake as Super Metroid is. Super Metroid's plot is almost the exact same -- despite all the bosses dying last time, no less (fancy trick, that, guys). But I loved Zero Mission, especially with the addition of Hard Mode (please be in Other M, too).
I guess my favorite would be Lost Levels from All-Stars. I like the original, too, but I'm afraid I'll never be able to beat it. All-Stars kept the difficulty but game over didn't send you back to the beginning of the world, so you could try any level without worry of lost progress, and the levels were made a bit easier.
Other than those games, I don't really like remakes. I generally think they're a waste of development time, especially with the dawn of the VC. Just make new games and give us the old ones in their original form for cheap.

I forgot about Shadow Dragon. Kind of hard for me to include that though when I've never played the original, but yes, it was great. I just have no idea if it was a particularly great remake. I know they added a lot to the story, which I wish they hadn't. And I'm curious to know how fun it would have been without the weapon triangle added in. Multiplayer was definitely a great addition though. It'd be nice to get a chance to play the original translated someday.
I guess they would have to be: MGS: The Twin Snakes Resident Evil (GC and DS) Final Fantasy 1, 2 (GBA) 3 (DS) and Super Street Fighter II Turbo HD Remix.
