I need to scratch that itch.. and I was thinking of Ori and the Will of the Wisps as it looks just beautiful and I've heard it can be quite challenging too, but I'm open to suggestion or maybe buying some others.
Well the obvious suggestion is Hollow Knight, though that one is quite difficult, especially with its boss battles. If you want an easier game, Steamworld Dig 2 is a fun and colourful metroidvania. Out more recent titles, Prince of Persia: The Lost Crown is also excellent and not overtly difficult.
Yeah, the Shantae games are good old-school fun. Haven't played the most recent game (I think it's called Seven Sirens?) though, but I did enjoy all the previous ones.
Prince of Persia: The Lost Crown and Metroid Dread would be my 2D go tos of choice. If you haven't played Metroid Prime Remastered I'd also play that for a 3D metroidvania experience, but for me you will appreciate that more if you've played a 2D metroid and are able to see directly how all the concepts translate from 2D to 3D.

Also, it's sadly not available on switch but I highly recommend Symphony of the Night if you haven't already played it. Along with Super Metroid, it's the grandaddy of them all!
Straying from the usual recommendations: Imp of the Sun.
I finished the game at the beginning of the month and it was very enjoyable.
It's from a dev in Peru, and is inspired by Inca culture.
Metroid Dread is a awesome game and one of the Switch's finest's. The world and gameplay are incredible.
Metroid Prime Remastered is a great Metroidvania that's more focused on puzzles and background observation/scanning, so it's more of a slower game. Looks amazing and has a fantastic soundtrack. Just don't play this and Dread back-to-back. I don't think that'd go well.
For smaller ones: Tails Adventure (GG) is a neat level based Metroidvania you can play through Sonic Origins Plus if you don't mind some old platformer flaws. Wonder Boy the Dragon's Trap is a very pretty and enjoyable remaster (remake?) of a old Master System game, though it's kinda linear I'd say. Still a good time for something simple. Lastly, while also decently linear, Mega Man ZX (DS) through Mega Man Zero/ZX Legacy Collection is a good time. It feels great to play and has a great pixel artstyle. The map can be a little confusing, tho. ZX Advent is also there, but that one kinda losses the Metroidvania feel IMO. Still, people seem to like it.
Also, if you have NSO expansion pass, Metroid Zero Mission is a really clean Metroid game. Feels great to play (Samus is very heavy, be warned). Metroid Fusion is really linear for a Metroid game, but it's still a fun game. On the normal NSO subscription, Super Metroid really nails the atmosphere and world of a Metroidvania. Great game.
For Non-Switch games: Metroid Prime 2: Echoes (Gamecube, but you'll probably want to play on Prime Trilogy [trust me]) is a good time with a neat light and dark weapon/world gimmick, Metroid Samus Returns (3ds) is basically the precursor to Dread, and it's really good (and pretty straightforward, honestly). Haven't played Prime 3, but I've heard good things.

Aeterna Noctis - a flawed, ambitious and underrated Metroidvania.
The true dark souls of metroidvanias/platformers, and will likely be one of the most difficult games you’ll ever play. Not for the faint of heart
@Dhaladog If you want something a bit unique for the genre, I'd recommend Laika: Aged Through Blood. It's often referred to as a "motorvania" due to its unique way of traversal and shooting action. I have to stress though the controls can be a real pain in the @ss for at least the first few hours. BUT if it "clicks" for you, you'll be in for one hell of a ride. Also, the story is very mature with strong adult themes, lots of foul language, brutal emotional story lines, and lots of lots of dying. However, there so many checkpoints generously so it's not as bad as it seems. The soundtrack is also one of the best I've heard in all my years of gaming (I'm 41). I loved it so much I bought it paying extra on bandcamp to support the artist. She killed it! Again, I have to stress the challenge in this game can be unforgiving at times but I found it very rewarding because of it.
