It does suffer from the modern trend of making everything into the simplest form possible. But it’s not terrible and gets the job done. Hopefully the successor will do something similar to the PS5. I really like how the background changes in both theme and music based on the game you have selected, and think it would work well for Nintendo.

Bland, sure but you can quickly get in to games and that's what matters (much rather have that than the slow PS5/Series X|S UI in comparison). Eshop is where the main room for improvement is needed as it's slow, cluttered with shovelware and in general isn't very good for discovery.
Bland sometimes is better here too much UI and you loose the context what it's doing. Sure we want something like 3DS themes but that requires someone at Nintendo to manage these system and that cost money. So if anyone on here can provide those funds - Nintendo would mostly likely be gladly do that.
I'd love a tv guide style layout as a nod to the wii having channels music should be a calm loop with no obvious end games should have a splash screen with music like on wii eshop should be part of the ui like on ps5
The UI is just a means to an end. The less it gets in the way of finding and loading a game the better. And the Switch UI is very good at not being in the way
I will agree with @Link-Hero that the eShop and also the NSO app are very slow. But these are essentially browser apps, you're opening a web page.
To which you might say "how is a web page that slow". And if simply answer with the obvious fact that the Switch is basically a mid-range phone from 2016 where they spent all the SoC budget on the GPU at the expense of CPU power. Try opening a web page on a 7 year old Android phone.... yeah, it's slow

I'm fine with it, had a Switch since late 2017 and it's still just as snappy.
My 3DS? Not so much. All of those badges and themes slowed things down...and that's before the games and folders were loaded.
Do people remember the artwork you would get when you loaded a Wii U game? Some of those were really nice! If the background switched to those when you hovered over the game's icon that would be cool.
But the UI is fine. Gets me to me most recent games, that's it.
The UI is bland, but for the most part it's not bland in a particularly bothersome way, just an unexciting way.
The eShop and wishlist could both use serious improvements. Folders are nice but they could also use some improvements; the UI is still very much geared for people who have fewer than 12 (digital) games and it's great for that but less great if you have 100+. If they could have a bit more options/flexibility without slowing it down for the 'typical' user, that would be ideal.
As much as I would love some themes, Nintendo will likely want us to pay for them (a la 3DS) and/or make them exclusive to NSO members (a la Switch icon badges), so... I'm kind of glad that they didn't bother.
"Gee, that's really persuasive. Do you have any actual points to make other than to essentially say 'me Tarzan, physical bad, digital good'?"
I love the switch UI. Nonintrusive and gets me right to the games. Easy sorting and settings access as well. Plus no Ads/extras. Pretty much my favorite UI on a gaming console ever. I just wanna play games or quickly tweak settings.

@NeonPizza Nintendo icons and mii usage are the Nintendo touch. Plus the NSO section which allows for quick redemption of platinum coins.
I’m not going to go into the eshop (which I am fine with as I simply use my wishlist to buy games) as that was the scope of OPs topic.

I think it is amazing! For me UI must be as simple as possible. I am there to play games 99% of the time and the other 1% is for looking at recorded videos and screenshots I do not need flashy UI or useless themes.

I would still rather do that than not have any themes or the like.

I don't mind the Switch interface being minimal, it's there to launch games, adjust some settings, and little else. It still has a bit of that Nintendo personality in there.
Nintendo made a choice after the Wii U to cut back on the out-of-game experience. The Wii U had a pretty nice plaza and UI and all, but it had notoriously long boot and load times for what should just be getting a player into a game as quickly as possible.
How to solve the problem: Bring back Bintendo Badge Arcade! I am mostly kidding (I loved that game ok) but seriously, some simple color themes would be nice. Or at least remove the word “basic” from them. It kind of puts salt in the wound there. The eShop really needs work, though. It is boring, and has way too much shovelware.
While I don’t mind the simple black/white themes on the Home Screen it wouldn’t hurt having something like 3DS themes. The eshop is a different story though, I swear it lags my entire console
