Oh man, I have a LOT of favorites, I'll name a bunch.
Stunt Race FX F-Zero series (all of them) Mario Kart series (all of them) Diddy Kong Racing R.C. Pro-Am (both 1 and 2) Outrun Pole Position (1 and 2) Ridge Racer Revolution (I thought it was better than the first Ridge Racer) Top Gear (SNES)
And that's all I can think of, I probably have more. Out of all of them that I listed, Stunt Race FX is my all time favorite racing game.
Well well, this turned out much better than I expected. I've seen some real greats here, and I'm pleasantly surprised by the variety of game listed here.
Though I am saddened that no one's mentioned Road Rash or Super Hang-On yet, but only a tad.

I like Road Rash and Super Hang-On, they are both fun games.
Not really a racing fan, but Road Rash is the exception, jumping over cows, knocking over other racers even cops with a club or chain was too much fun, the slow walk back to your bike after being knocked off, while hopefully not getting run over by other bikers, great memories.
Not one person has mentioned Micro Machines on SEGA Mega Drive
I love Mario kart as well blah blah blah... but Driift Mania really impressed me as well from Wiiware. DAMN why didn't they create online play for that game.

And I'd heard great things about Micro Machines as well. Not my type of racer(I can't steer when it's overhead for some reason), it seems awesome none the less.
Yeah, Micro Machines was awesome on the Mega Drive, but my number one is Enduro Racer for the Master System, followed by Diddy Kong Racing. I loved that game.
#5. Diddy Kong Racing -- The different vehicle types worked well and gave the game plenty of variety.
#4. F-Zero GX -- While I did like X, GX felt like a completely new game that retained the same spirit as X. And how can I say no to 1,000 MPH crashes? :3
#3. Trackmania Nations Forever -- What can I say? I loves me some Trackmania, especially when it's free.
#2. Mario Kart (The Series) -- It's hard to narrow it down to a particular game since they're all absolutely fantastic. The tracks, power-ups, and overall feel of the game are amazing. But what could be at number one?
#1. Burnout 3: Takedown -- I will defend this title as the best racing game til the day I die. Why? Because the racing is fantastic, the takedowns are soooooo satisfying and the mode where you get money by crashing lots of &$#% is the best extra mode in any racing game. If you say otherwise, I'LL MURDER YOU!!Well, maybe not murder you, but I WILL hurt you badly!
EDIT: I'm also looking towards Blur, but I'm not sure if I'll have enough money for it between everything else that's coming out this year. V8 Ninja is sad.
