I was wondering why so many people were naming the Yarn Yoshi amiibo when it hasn't released yet... but then I remembered... Curse you, NoA!
Anyways, I guess I'd have to go with Pac-Man, as he is almost perfectly-designed and I wanted him on the Smash roster above all other characters. To be honest, I think the majority of my amiibo are very well-crafted. Samus, Toon Link, Kirby Ness, Wario Mario, Luigi (although I hate his stance)... I will say, though, that I'm not very satisfied with my Link amiibo. It just looks... generic.
I have several amiibos but my favorite is definitely Shulk! The quality and detail on him is so amazing! My second favorite is probably Shiek because she has tons of detail too!

My favourite amiibo is Toon Link, he looks just like he does in game and the level of detail in the sword and shield amazes me. When the yarn Yoshi's releases here in America, they will most likely become my favourites, too. They are so cute!

I love Toon Link the most too. It's just his character design in general, the impression and details like the texture of his tunic that make him great.
I also own Ganondorf (awesome details, but the face looks scarred and the pose is boring), Samus (alright, but not that interesting), Pikachu (same here) and Daraen (great details, dislike the faces of most human characters, but fortunately my Daraen looks a little sad).
Never liked anyone more than Toon Link, since he was my first amiibo and got me into this mess. ;-]

@SetupDisk: I will never understand how this abomination of a character redesign can be liked. I seriously hate him so much with the face and the arms and the legs and everything. It is just so not Pacman, but rather looks like one of those awful Olympia/Expo mascots. But I guess his amiibo does what it is supposed to.

I actually like that design of Pac-Man. It isn't classic Pac Man but he looks nice, and if they used his old school design in a game like Smash Bros, it wouldn't be as interesting if he had no limbs...
I just wish the regular Pac Man stage was in Smash for Wii U instead of Pac Land. Pac Land is one of the worst stages in the game along with 75m.
But since I've never actually seen Robin in person, I would like to day that Dark Pit looks amazing. The pain job, details, and even the face, which they rarely get right for characters without giant cartoon faces, all look on-point.
Shulk also looks outstanding, considering he has such a complicated design!
Just got Robin the other day! I can confirm he looks absolutely stunning and is my favorite amiibo. I love the detail they put into the pages in the tome he's holding.

I have 14 amiibo so far. I love Wii Fit Trainer and Peach, but that's because I really love the characters. Some of my favourite designs are Palutena, Robin, Jigglypuff, Pit and Zero Suit Samus. Either they look really true to the original character, or the detailwork is just amazing (particularly on Palutena)
I have several amiibo that I like but Ganondorf is my favorite and standing second is my olimar but that will be classic mario when i buy the mario maker special bundle.

Of the amiibo I have, its mostly the cartoony looking characters that I like in terms of design. So basically: Most of the Mario line except for SSB Peach and the ones I don't have, Kirby, Meta Knight, all the Pokémon ones except Lucario (don't have him either), Ness, PAC-MAN, Mega Man, Sonic, the Super Mario Line (especially Peach), and the Splatoon line.
Not that I don't like the more human like characters. I still love my Palutena amiibo and the Robin & Lucina figures are pretty nice. They all look really nice so I like them all. :3
My most-liked are probably the Yarn Yoshi trio, they sit atop my Wii U, and I've got plenty of positive comments from family members and friends who've seen them. I also like the novelty of having NFC toys that aren't massive chunks of plastic.
Speaking of massive chunks of plastic, I really like King Dedede's amiibo. The figure feels nice and weighty, and while he's a simple design and therefore not particularly hard to get right, the little details like the texturing on the ruffles of his coat and the bolts holding his hammer together are excellent and show the real attention to detail these figures get. For similar reasons, I like both variants of Bowser - very weighty, high-quality feeling figures with loads of little details. That said, with a collection likely nearing forty of the things, it's very hard for me to pick a single favourite; and I'm content to say my collection as it currently stands is yet to disappoint me.
