Oh, the Did You Know Gaming? line of videos is pretty fun to watch as well. They're filled with easter eggs, cut content, & some interesting speculation.

yoshitomario has awesome Minecraft videos. I don't really watch many videos because I don't have a YouTube account to subcribe to anyone, but I've been watching his Let's Play and Survival Map series since July 2012. CrystalFissue and Gilvasunner have some nice videogame tracks. Oh, Vitaliiii and BowieZ are both very inactive(I don't know if the latter has even posted anything new for a long time), but they're amazing composers, you MUST check their channels! Did You Know Gaming? is also a classic, of course...
The Game Theory line of videos are great watches as well.
One of my favorites is the one where they prove that Sonic games don't really move any faster than any other platformer (and that Mario, in the original SMB, moved faster than Sonic does in Sonic 1).

-JamesNintendoNerd (AVGN): One the greatest guys in the net to watch! I'm sure he needs no introduction to most.
-FFL2and3rocks (TRG): Despite sadly haven't done another Third Rate Gamer episode since 2010, (I know he comes here so: "Please do another TRG!1!") his videos are clever and hilarous! rewatches are a guarantee.
-Alexander4488 (GameDude): This guy gets too much crap compared to a certain other game reviewer who does it purely for view$. GameDude has a unique form of comedy, and his reviews can be so weird and quickly edited that you'll wonder if it was all intentional or not. A video interview someone did with him revealed that he does edit werid because he has trouble reading a script and ends up talking slow.
I really recommend the episodes about Mario Kart 7 & Super Mario 3D Land, just because it goes to show that Nintendo still knows how to add in a few clever secrets/references.
BTW, in the Super Mario 3D Land episode, it's not that UFO everyone knows about.

Ballad of the Mages and Star Fox: Space Oddity are both incredibly charming videos from brentalfloss. And most of the things in his ... with Lyrics series are silly fun, provided you share (or at least tolerate) his occasionally crass language/humor.

Has anyone else seen Building Sora's Keyblade (Kingdom Hearts) - MAN AT ARMS?
It's a quick video chronicling a professional welder, as he forges a real life version of the Kingdom Key (Sora's default Keyblade). He likes to forge swords from popular culture, and after getting a bunch of requests for the Keyblade, he thought it was unique, and took the challenge.
