Hot take, I really like humpback for rainmaker, it has a lot of interesting cover and a second route that people always forget about. It also carries a lot of nostalgia from S2 for me.
@AccessibleDaydream Ooh, OK... What do you think of VDynamo, VSplash, Bucket, and Mint? I feel like even though Dynamo is depressingly weak and hasnt/won't receive buffs, composition like that could work for it. (Alternatively, Goldynamo with Mint, Pen, and NSplash might be doable in Zones...?)

As for your first idea:

In this particular comp, crab plays a similar role to vac, though vac is probably still a better choice if it's properly played around (surprisingly unintuitive).
Your second comp:
gDynamo (chumps)
Mint Cav (bubble)
(blue?) Pencil (cooler)
nSplash (strikes)
Here, I think it would be good to swap either gDynamo or Pencil for either Flingza or Zap. gDynamo likes to play similar positioning to Pencil, and two long ranges will hold you back more than anything. If you're dead set on Dynamo, Zap would be the cooler choice, with strikes as the next step in the play, followed by bubble to provide safety for moving up. If you'd rather keep Pencil as the cooler, I'd recommend swapping in vRoller in place of Mint, and run something like custom range blaster for aggressiveness.
Apologies if any of this is questionable or doesn't make sense, it's been a while since I've engaged in comp building and theory, so I'm a bit ootl.

@Dev-N I was thinking about doing a new playthrough of Side Order, but I don't know if I want to work through unlocking all the weapon palettes again.

Generally, I really like Side Order. I like the bosses, the music. The levels are surprisingly compelling. I really didn't think I was going to like Side Order. I think I put 30+ hours into it, which is more than I've put into Splatoon 3's single player. I still haven't done a brand new playthrough of Splatoon 3 single player. I kind of want to play S3's final boss. I haven't revisited it since I completed it. I may just replay the launch facility and final boss.
For me, it has to be my first clear. Hearing Ebb and Flow in any variety just gives me so much energy. Overall I think that Octo Expansion was better but Side Order had more replay value. I wish they added more content like new floor layouts and objectives new weapons. Imagine if you could spend pearls to unlock different main weapon variations of all of the pallets.
@Dev-N I'd say my favorite Side Order memory was finishing the spire with Eight's palette and getting the low-hacks badge. My goodness, did that feel good after many, many attempts. That badge still hasn't left my splashtag ever since, lol.

@Dev-N Although I have my problems with SO, I can fully admit that the launch night was thrilling! Getting home from Wednesday evening church services and literally running downstairs to boot it up will forever be a highlight of my time with S3. My first run up the Spire was great, and even now that I have 100% the mode and now stick to RotM, I do have fond memories.

@AccessibleDaydream I have noticed Flingza being used more, but I feel like it is tough to fit into a comp with another roller (I play a lot of Dynamo, Swig, and Roller, plus a bit of Carbon, and I have found that it is very tough to have multiple of that class in a single comp). However, after asking your advice I though of maybe swapping it to:
Goldynamo
Hedit
Mint
Brush
It would be an insanely off-meta comp that would probably only work in lowlevel tourneys, but with slower weps like Dynamo and Edit, the Brush can skirmish to take away attention. And of course, Decav can hold its own and has Bubble to help Edit hold ground. Thoughts?
My question is, where does blob fit in the meta? It’s been my main pretty much since it launched in S2 however it is just so outclassed as a midrange weapon, it can paint well but it doesn’t have a valuable kit.
@Xenoblade-Fan Sadly, it hasn't seen much use due to technically bad kits (fun as I find BlobDeco to be, it isn't really viable 😔) and being too slow for such a fast-paced meta. Cooler makes everyone fast, kill times are super quick, and with all of that a weapon with a low skill floor (IE noobstomper) but imho high skill ceiling (tough to use at high-level play) means that the weapon's fairly slow projectiles won't see much use unless it's from a onetrick player who is probably mostly playing a passive paint/chip damage role (which is honestly very boring for viewers).
@CaleBoi25 I defiantly get number one splat assister very frequently. I know my roll, I know my weapon, and I know that I am not too far from the skill ceiling so my growth is not very significant.
@CaleBoi25 I would personally swap Gold Dynamo for regular Dynamo, and Hedit for nHedit, because Cooler provides buffs, Crab provides suppression, and Mint and Brush provide aggression.
@Dev-N I also played a bit of side order for the occasion. I tried using Eight’s palette without hacks, since I’ve yet to clear the spire without any. I tried a few runs, but the highest I got was floor 21 or so. Hopefully I can clear it eventually
