Galaxy had a slightly different tone from other Mario games, so the orchestral music is only really appropriate in those particular games in the series.
I agree that it's a style thing, orchestral music usually only fits grand, epic adventures. Yooka-Laylee doesn't look like it's trying to be epic, especially if it carries the same tone as Banjo-Kazooie, it feels too relaxed and lighthearted for that kind of tone.
I think video game music has become generally kinda stagnant these days there are some great soundtracks sure but on the whole not much happening. Nintendo are one of the best.

As for orchestrated soundtrack, Nuts and Bolts closed that case for me years ago. The music in BanjoLand was absolutely phenomenal and I can't wait to hear this game's soundtrack

As a composer, this statement raises an eyebrow. I understand your sentiment, but... the vehicle matters. While technology has come to the point where VST instruments can sound amazing, it will always sound synthetic. Granted, as already mentioned, there are some great things one can do with synthetic sounds, but to say that it doesn't matter as long as they make good music leaves a lot of holes to what "good" is.

Doubt it due to cost, don't think Microsoft would do it unless paid a lot (they seem to be an IP hoarding company and there's the rumour of a new BK to be unveiled at E3). That said, the Banjolele is an actual instrument (George Formby's weapon of choice) so maybe the character names were picked with purchasing Banjo-Kazooie for a sequel in mind. Come on Banjo-Laylee!

And orchestrated music will always sound like an orchestra, so? Order of importance: Music > Musician > Instrument.
