The 'craze' was because of low stocking when they initially hit the market. As usual, limited supply of a collectible gets everyone into the "I must buy now or else the price will quadruple and I'll never be able to find one" mode.
That may or may not repeat depending on how Nintendo manages future releases and how hungry the fans are for more frantic collecting.
I suspect Nintendo as purposefully kept the functionality of the first generation of amiibo quite low, as it then leaves room to expand functionality slowly over time and keep the demand up.
If Nintendo never expands amiibo functionality from what is currently on offer then, yes, perhaps the 'craze' is over, but I suspect Nintendo will act to try and stop that.

As someone who has waited hours on line to get some of the "rare" amiibo, I can say YEEah, it's sorta dying down, or, at least it's not as big as it used to be, mainly due to demand not being as overwhelming for the stock, which is now revving up MOAR since they know in advance and what not.

In general the Toys to Life market is dying down. Skylanders are rumored to be shut down, Disney Infinity is already cancelled.... the market was oversaturated and it lost it novelty.
I think it'll depend on what Nintendo has planned for Switch. We know that amiibo are supported with Switch due to BotW and that the final 3 Smash amiibo are MIA but we don't know how far Nintendo will utilize them outside of Wii U ports (BotW is technically a Wii U port).
But I still buy amiibo... all of them. Granted, my sealed collecting days are behind me- all open box after completing the Smash line, and I no longer care to keep tabs on when stock goes live because I know I will eventually find it in stock sooner or later anyways, but I do make a point to keep collecting.
I just got the 4 new Zelda line amiibo and, like Wolf Link, they are absolutely gorgeous. Among the best to date for sure.

I'm wondering this too. I see prices on eBay which are ridiculous and yet I can go to my local game store and see shelves stocked of the same one. Makes me think are regions having Amiibo shortages? Or am I just sitting on a goldmine of Amiibos at my local shops?
With that said, I'll be making my first Amiibo purchase in over a year. Robin and Winter Isabelle.
I think that one of the problems was that they released the amiibos 2 years into the Wii U's life. It's sort of like you have a slew of games that had nothing to do with amiibos and then, 2 years into the failing life of the Wii U they say, "Look!! Amiibos! Now you can sort of do some extra stuff with some of the newer games coming out!"
I think a better plan would have been to have them ready for the Wii launch, have it built into the original 3DS (instead of afterthoughts on both) and then, and I'm not sure how you'd balance this, have them enhance games without them being tools to unlock sections of games.
The stuff I've with the amiibos has been largely underwhelming. The integration with Mario Party 10 shows just exactly how you fail at it.
Add to all of this that they're part of the Wii U and the Wii U is dead and, yeah, the craze is probably over.
Overall I kind of like them for what they are: little statues of my favorite Nintendo characters, but I don't have any intention of collecting all of them. I'm basically sticking to the Super Mario Series and a few odd ones like the 8-bit characters because I kind of like them.
I still think it needs an Infinity-esque game where you actually play as whatever amiibo you happen to choose to play as. It seems like that possibility is growing ever more unlikely at this point, though.
Was it because everyone was after them or Nintendo had problems producing them which meant a niche audience was paying over the odds? Keep in mind Amiibo sales were paltry compared to Skylanders, and was behind Disney Infinity which was deemed a flop and canned.
Amiibo have shipped tens of millions where as Skylanders have sold hundreds of millions. You're not doing much to convince me that Amiibo isn't the little brother.
