This confirms there will be a slew of new footage next week (it's not just about the 3DS then)... and dowsing! In a Zelda game!
If I'd have to guess, I'd say it's the game's new way of "sensing" things. Similar to Metroid Prime's vizors, the Zelda franchise has been experimenting with senses as well: as a wolf, after all, you could "see" smells and use other wolf senses.
I'm guessing gameplay-wise you'll have to use the Wiimote as dowsing stick and it starts to vibrate/make sound if you're near something. I bet it'll be more than just water. (I've seen anime where dowsing was used to track down ghosts/spirits, for example)

Looks like this is the dowsing, it's done in the "Silent Realm", this game's version of the Twilight Realm. We have to collect tears again, like in TP.
Pretty sure neither of those are confirmed, but I'm fairly sure the bird-riding is this game's fast travel method (replacing Epona) and the fishing will most likely make a return. Supposedly this game is packed with dense content which would mean more sidequests, and fishing is really popular so I doubt it'll be left out of a 3D Zelda game anytime soon.

More like the second example than the Wolf/Visor thing I would've thought. The Stone of Agony/Shard of Agony are probably the closest things I can think of to dowsing in a game.......
