Try going to the AUDIO menu, then change the decoding priority to DEC. PCM.

There are games like Ninja Gaiden, Mass Effect and Call of Duty that have issues with surround sound on the Wii U. Go back to stereo in that case.

Actually, that depends on your surround sound receiver.
I get 5.2 PCM on both COD and ZombiU, which people said to change back to stereo to get normal sound. I got surround sound, while others didn't, which means they didn't set it up right or their receiver was older.

Also, go to the "5-channel setting", and change it to HDMI or digital(try one of those. HDMI probably).
Try changing the A.F.D. to AUTO.
EDIT: Change the Dynamic frequency to off(COMP. OFF).

You have a picture because of the HDMI cable but HDMI provides no audio. You will need an audio cable running OUT from your television IN to your Sony Receiver's audio.

My PS3 is hooked up to my surround by HDMI only.

My PC just had video when connected to HDMI monitor. Oh well, I'm not sure then.

The receiver passes the video signal, while handling the audio.
He needs to plug the Wii U into one of the INs on the back of the receiver, then plug in an HDMI cord to the OUT on the receiver leading to the HDMI IN of his choice on the TV.
If your HDTV has ARC, plug the HDMI cord into that.

You need to upgrade the audio software on your PC to a format your receiver supports.

I just wish the Wii U had optical output - I have to use my crappy projector speakers - come on Nintendo - otherwise a fantastic piece of kit

Did those settings work? ARC means you can hook up your receiver to the HDTV and they communicate back AND forth through one cable.
I can change the volume on my A/V receiver by using the GamePad's TV remote feature on the HDTV, because my HDTV is sending audio control signals back to the receiver.
Every device with the CEC standard can do that.

EDIT: Also, when I turn off/on my HDTV, the receiver shuts off/on automatically as well because of ARC.
