I bought a Nintendo Wii mote and an after market Nunchuck made by (Kama) for $10 .. i also had to buy my GF a Wii mote and nunchuck so i got her a set for $40 also after market that was made by rock candy.

Should i return my after market nunchuck and pay $20 for the nintendo one? as well as return my GF's Rock candy wiimote with nunchuck and pay an additional $20 to buy the Original $40 wiimote and pay $20 for the nintendo nun chuck?

Yes. Always. Never had any luck with third party accessories. Get the Mario and Luigi Wiimotes and you'll be straight bros.

EDIT: The first party controllers are a good idea because they last at least four times as long. Oh, and NEVER use a third party Nunchuk with a first party Wiimote. That will gravely endanger the input jack on the Wiimote. I know.

For what it's worth, some like the Kama. And the Rock Candy may be OK. As backup controllers to foist upon guests, they'll likely serve. However, the Nintendo models are well built, comfortable, long lasting, and fairly battery efficient. Nintendo knows how to make controllers that hold up to abuse and still function flawlessly for a long time.

Good controllers are essential and you never want to saddle yourself with anything but the very best.

(I still have the Wiimote that came with my launch Wii and it works like a charm to this day after extremely heavy play--it was my only controller for 100s of hours on Twilight Princess, Excite Truck and the start of the VC.)

It should appear exactly as typed. However, most games will actually use the name of the corresponding Mii as your in game nickname. (Not all, though. CoD is an exception, for one.)
