@SpeedRunRocks KotR is the biggest metal influence but there are tons of other people who are more solo acts playing this for sure. Check out their schedule page and you'll see a lot on there. Also, that Paper Mario show is really just made up over tons of solo artists who all collaborated together to make it happen. So every single one of them also does their own thing.
I wanted to reply to you though because of the bottom comment about looking for people : "Anyone out there dig the music of Priest and Maiden and Megadeth as much as Zelda 2 and Mario 3 and Tecmo Super Bowl, and also play guitar? Asking for a friend."
Check out the community of dwellingofduels.net, literally hundreds of people who meet your description and have tons of passion for it! They do monthly competitions but the comp part is just for fun. There isn't any more, people are just looking to have fun, get better at their crafts, and pay tribute to the stuff they love. Sounds up your alley.
Also check out "BonusStageVan" on twitch to see a handful of these people play live every month. A bunch of them will in fact actually be at this VGMTogether show. It's all insular, us in the VGM community are a small and tightly knit bunch!
