Galaxy 2 will be the better game (read: higher ratings/more polish/etc) and Other M will offer something new (especially for a Nintendo game - cinematics for example)
If I had to pick which I could play right now, I'd go for Other M; I can wait patiently for Galaxy 2.
The camera angles in Galaxy 1 are terrible, so I don't expect much from the camera in Galaxy 2.
Other M looks very promising and is the clear winner for me.

I'm in the same boat. Galaxy 2 looks beautiful, but we've got a good taste of it in Galaxy 1. Metroid Other M, in the other hand, is an entirely different experience. So, if I HAD to pick one first, I'd go with Metroid Other M because it's something different, although in real-world there's no way both aren't day-one purchases for me.(Unless the reviews are absolutely terrible).
I have no doubt in my mind that SMG2 will be a better game, and it's not a risky endeavor. If all of the "gambles" in Metroid Other M payoff (Sideways control, mix of 1st and 3rd person, story and cinematographic) it's going to be amazing.
As a side note, I recently purposefully played Super Metroid in a sideways control scheme using only a wiimote, with a button layout that seems like what Metroid Other M will be (by looking at that gameplay trailer), and I must say it felt good. Really really good. And that's without taking into consideration the pointer-to-1st-person control Other M will have. This may actually work.
Sorry, the post can't get into the "how". But, you're right.
But really, it works. I was surprised HOW WELL it fit. The thing to watch for is how often the camera view you vertical (where you are running to or from the camera) instead of horizontal. If the vertical view isn't over used, then it would be like Super Metroid and it's going to be great.
Really, I was hoping it would fit well, and I'm still surprised at how natural it felt. I can see why they would feel confident enough not to include multiple play options.
EDIT: BTW, I also have Super Metroid on VC (such a great game, was a day-1 purchase for me on VC, if you don't have it GET IT NOW) and the Wavebird and Classic controller had the "nostalgia" angle and I STILL preferred the sideways setup. That's not even taking into consideration that the sideway setup doesn't have enough buttons to give you all the comands a Wavebird and/or Classic controller gives you, mainly talking about the angle shots (using L or R). Not going to have this problem on Other M, since it has auto aim. I'm telling you guys, this control is going to work if they don't over crowd it.
Other M. Galaxy 2 will be fun, but it is nothing new. Just what could be done as DLC if Nintendo went with a larger storage system. Other M is something completely new for the series, and new for Nintendo.
