Personally, I hate them. Not just because I find them difficult, I just don't enjoy them. I prefer the rest of the game. True in platformers, FPS, action games... everything! The one exception I can currently think of is in NSMBWii, the final boss plays out more like a level than a fight.
Mind you, I loved Shadow of the Colossus and Monster Hunter Tri, games basically about fighting bosses. But in a game designed specifically for that, it's much more enjoyable.
I personally love bosses. They've always been one of my favorite elements of games, which is exactly why (like you) I love games like Alien Soldier that play like boss compilations. However, I've played plenty of mediocre boss battles that seemed forced into games that didn't really need them. Dead Rising is a good example.
I prefer bosses that require your skill that you built up in the previous stage or area. Games nowadays do not have enough bosses!
This, and when you have to learn very fast in boss battles is great. Also I hate bosses that follow Zelda's formula, three hits and your gone. Gimme a hell awesome boss that takes a long time to take down.

Yuk, I hate long and drawn out boss fights. You have to have the perfect balance between the boss being hard enough that he doesn't seem like a cake-walk, and keeping the adrenaline flowing. When you have to keep going and going, it isn't very exciting at all and just gets tedious; especially if the boss is tough and you die a few times trying to beat him.
Other than that, I mostly agree with those statements.

I love bosses, even some of those easy "3 hits" ones in the Mario games. I don't remember any Zelda games that had the 3 hits thing other than Twilight Princess.
Love the music even more. @Aviator: Eh, I don't like long bosses much...like the Phantom in Kingdom Hearts too like an half-hour.
...Er, wait...Monster Hunter 3 has long battles...I dunno then. >_> But yeah, I like more balanced bosses, ones that are like overpowered like the Boost Guardian in Metroid Prime 2 (I actually stopped playing the game for weeks because of him, lol) just makes me wanna throw the controller at somebody. xD

I like bosses but it depends on the game. For instance, I love Persona 4 bosses (especially shadows ), because they have a strong personality and they're quite difficult to beat. There's something more with video game bosses: when I beat them after being challenging I become quite proud of my skills ;P

Boss fights are the biggest thing I miss when I don't have time for "real" games. I love the way they get my adrenaline pumping. Oddly, though, my favorite boss of all time is not the most challenging, but the funniest: Gooper Blooper from Super Mario Sunshine. I just think the way you have to beat him is so hilarious.

Unfortunately, my favorite series, the Legend of Zelda, has made me think that they were kinda slacking on boss fights, especially with Phantom Hourglass and Spirit Tracks. 4 main bosses? REALLY? And with bosses like that wind boss in PH?

Well, I don't always love bosses. I think a lot of games try to shoehorn them in (the last fight in Uncharted 2 springs to mind), even if it doesn't necessarily fit the game. But I love them when it's done well, and meshes in with the game well. 2010 has seen some really awesome boss fights--Sin & Punishment 2, Mario Galaxy 2, Metroid Other M and Kirby's Epic Yarn all had fantastic boss fights.
