I literally just booted up the original Castlevania to check for this, so I assure you I'm right. It basically says 'PRESS THE START KEY TO CONTINUE' and then after a brief cutscene the gameplay starts. A little light on features, there.
Unfortunately, Contra III: The Alien Wars does not have a sound test in the options menu, and it's a shame, really, as it has some very awesome music (this highly epic third stage theme comes to mind). The only way to listen to the music outside of the game is on YouTube, afaik.

What specific and obscure questions lol. For what dull yet legitimate reason do you need to know these things? My mind is reeling with possibilities... ;P
Preferably something from the NES. Something actiony and relatively mindless (no offense, Castlevania or Contra fans...), but classic. I need a game along those lines with a level and/or difficulty select option, with background music that plays while you are making that selection.
AM I REALLY ASKING TOO MUCH HERE??
It's for my novel project actually. All for the sake of a throwaway line, but I at least want to make sure I get it accurate. I was hoping for Castlevania, but that doesn't seem to be the right tree to bark up here.
@Brutus - On Contra III: The Alien Wars, there is no music playing in the options menu; there isn't even any music playing in the title screen. Sorry, I thought the post was a bit vague, and I interpreted it as "is there a sound test in the options menu?".

River City Ransom also appears to have multiple difficulties: http://en.wikipedia.org/wiki/River_City_Ransom#Localization "The number of difficulty settings was reduced from three to two and an alternate 2-player mode (2P Play B)..." Someone else has to check the music part, because that would require me downloading ROMs currently.

Now that I think about it, most old games - even up to the 16-bit era - didn't use music in the options screen. Streets of Rage 2 had quiet (menacingly hollow and empty) mode select and option screens with empty black backgrounds.
If you can use the password screen Super Castlevania IV should work well. That's got some nice music, and the screen functions as both level and difficulty select, at least if you're like me and you've written down all the passwords for all the stages after you've already killed Dracula once and there are twice as many enemies and they take twice as much damage.

Hey, and if the character you're writing is named "Iain" I can give a completely accurate password for any level in the game on hardtype or for the last four bosses. Of course, since every password is a 4x4 grid of axes, holy water, and hearts, it might not translate to prose so well . . .
