I would buy the heck out of that collection, if only for the ability to play Final Fantasy 6 on Switch. I know that the NES games are pretty primitive, but the SNES games are by all accounts pretty wonderful, FF6 especially.
Mario Galaxy is ten years old, and now I feel old.
I and III are ok even with the PSP enhancements. Not ones I'd ever revisit.
IV is at its peak with the DS/PSP versions and I don't need another.
V and VI have their excellent GBA versions too, I don't need another.
I don't need any more versions of FFIV to FFVI, even if I love those games. And if they ever use the godawful mobile/PC ports of FFV and FFVI, I'm definitely not buying it. But if they put actual effort into those ports or just use the original sprites, then I'll consider it.
@Meowpheel FFII's biggest problem is the sheer amount of grinding needed to "level up" stuff, which was even worse than FFI or FFIII's grinding. The idea was fine - do something more often, you get better at it. That makes sense, Rune Factory 4 did that same thing and it worked naturally because the curve was way better. It made every character that took up your fourth slot just so much effort to train up.
And the story was at least pretty decent for a pre-SNES RPG, but the grinding problem single-handedly kills the game so hard. The only way to make the game tolerable is to exploit the programming so you learned magic quickly, but they fixed that with the GBA release so now that's just completely gone and terrible.
I can say some nice things about FFII, but my experience with the game was just so terrible I strongly recommend against the game.

Eh... maybe No.
Reasons :
1. I have never played FF 1 & 2. Not really interesting for me.
2. I have FF 3 & 4 NDS version.
3. I have less interest with FF 5 & 6 since the Remake on Mobile were Terrible. Unless, if FF 5 & 6 at least got SAME treatment as FF 4 Remake (Proper 3D Rendering in HD, Chibi looking, Voice Actor, New FMV Scenes)
@Anti-Matter It's true that the mobile/PC versions of FF 5 and 6 were awful, but please don't dismiss them entirely. They are truly phenomenal games, FF6 probably being the best RPG I've ever played. Also, the original sprites for the games were pretty beautiful to begin with, and also have a slightly chibi/anime style, albeit a bit blocky. Square doesn't even need to remaster them. And seeing how their mobile and PC versions turned out, I'd prefer that Square leaves them alone and releases the originals!
Yes please. I still haven't managed to play IV-VI at any point, and it's not exactly like there's any way to play those with a controller right now afaik. FF1 would be fun to jump back to again anyways, and I've never finished III.
I'd buy a collection but I don't know if I'd buy the original games. I remember buying Final Fantasy on Wii's Virtual Console after playing the GBA remake and I stopped playing very early on because of the grinding you needed to do to advance. Leveling up was way too slow in the original game.

To be honest I'm only interested in either FF9 or the newest... Kind of 0 interest in the old one so i probs won't, but it'll be good for people that want it of course
Already have I, II, IV and VI on mobile, so not sure I'd buy a collection on Switch - though I am definitely interested in playing FFV. Also, playing the NES version of FFI intrigues me. The first game, as tarted up and softened for the PSP and ported to mobile, still stands up as a good time - but I'd love to sample the original, brutal NES version.
The real question is: DQI-VI or FFI-VI? But let's not revisit that old chestnut.
