Generally I would advise you to revisit the villages after important events. Sometimes new sidequests appear. Personally I think it is worth it for the new dialogue alone.
I may be misremembering, but I’m fairly certain the game explicitly told me “you can use flying echoes to glide” the first time I learned an echo with wings.
Ok, conveniently I recorded my playthrough of this game, and checking my first session I found it:
The game didn’t tell me with some sort of pop up, I read the description of the Keese echo, and that’s where it mentions gliding.
I just got bombs for sword fighting mode zelda, but the the sword fighting energy meter strikes me with such anxiety as it dwindles so fast, at the moment, I cannot justify wasting that energy meter for a bomb.😆 I have a level three energy meter.

If I remember correctly I simply moved up to the flying tile, when it started hovering or flying towards me and then I pressed the button (was it ZR?) to copy it as an echo. I think if you look closely, you can see it glowing, like the other objects, which you can turn into echoes.

Like @Eel already mentioned in a previous post, flying tiles can be used to easiliy cross gaps to get to the other side. Just make sure the other side is the same height as yours or below it, otherwise you will crash against a wall and fall.

I've been using the water blocks, as they are fairly controllable as well as being horizontal and vertical.
That's bizarre... flying tile was one of my first echoes in the game and I didn't get water block until many hours later. The game must play so differently for people who play things in different orders.
I've fully felt that Nintendo has had a pretty "meh" year so far (a lot of releases, but nothing much better than merely good, even TTYD underwhelmed me), but they've really knocked it out of the park with this one. Brings a smile to my face and I never want to put it down.
Currently just entered the third dungeon, which is Jabu Jabu's Sanctuary for me, as I did the desert first.

It’s a bit funny how the game seems to treat Jabul Waters as the intended second area…. But then they went and put it on the farthest part of the map, so I’m sure most people will do it third.
@Eel, yeah, I think they intended that most people would have ran into those soldiers talking about Seesyde Village (standing just north of the first Zelda wanted poster you see coming out of the forest) & that most people would try to go straight back to Hyrule Castle Town after getting out of the forest (which would put them closer to Jabul than the Gerudo Desert).
That said, the Gerudo Desert is closer to the forest, & desert biomes tend to be my least favorite in games, so I was thrilled to be able to get to it & get it over with.

I also finished the third dungeon (Jabul) today and I think I should have finished Jabul's dungeon first before Gerudo Desert because Gerudo's boss is more tough than Jabul's one.
