My demands:

-Dedicated levels for battles
-Koopalings
-Wart, Mouser, and more from part 2
-Track-maker
-Arena-maker
-Voice chat options or this game will be dead to me
-Sonic & company
-New power-ups instead of gimmicks
If they do add any more gimmicks in the future I'd guess they would have some kind of dynamic tracks, maybe one that reverses or changes layout randomly during the course, even on 3 lap courses. Maybe that would be boring... They could have some kind of extra mode in races or battles where special conditions get applied to the racers or the course randomly? Imagine something like what was in City Trial from Kirby Air Ride.
A course creator would be pretty difficult to implement and unlikely but I think it would be fantastic if they pulled it off and made it like Super Mario Maker. Some people may not agree but I think it would be fun to have more customizable karts, such as adding more parts, color options, and saving your own kart presets for later. Also, more characters and better battle maps.
Mario Kart for NX should be a return to basics. No Gliding, swiming, anti-gravity areas. No Kart customization. Just pick your character and go. Let the next handheld or home console Mario Kart have all those features. The NX Mario Kart should be more like an enhanced version of Mario Kart DS.
Why would they take a step backwards? All the additions make the racing more unique.

The gimmicks make the tracks unique. Why would they get rid of them? I think if there was a track maker, I think it would be a bit rubbish and the tracks you would make would be quite boring because it would be hard to make an actual good track maker.
After incorporating Zelda, Animal Crossing and F-Zero I would like it to become Smash Racing tbh. Get Pac Man and Mega Man etc involved. The power ups would need some customisation probably.

I think that is because his assumption is that the NX is a micro-console of some sort.
@FriedSquid: Nintendo may come under fire for copying SEGA if they used dynamic tracks as it was a very key part of Sonic Transformed. A Mario & Sonic crossover racing game could work well though, especially more than the garbage Olympics games.
Better Battle Mode?: i like watch CPU win if i lost, so if they where bring that back and make it better, then i be fine with that, i was not a fan of MK8's battle mode tbh.
Level Editor: i heard it hard to get it in the game, which i can understand, hopefully one day they well get it working right, it well stink if it's limit, if that's the case then i don't want it afterwards)
More Modes - sounds kinda odd, but what if they make a CTF mode, where you drive to the flag and when you get to it the flag is one the Kart and you take it back, i can only think of that one.

No one knows what the NX is so there is not point saying about hardware limitations.

Why would they get into trouble for using tracks that change in the different laps? It's not like they have copyrighted them.
I actually wouldn't mind if they revisited that idea they had for MK8 where you could drill through the ground and go subterranean, and have it as another gimmick along with the anti-gravity, glider and water submersion. I think they could do some cool stuff with it.

I personally think the drill idea might be a bit boring, but if they can make it interesting, I would probably like it.
Well a level editor isn't impossible, ModNation Racers did it pretty well and that's like 5 years old at this point. The problem is Nintendo is a bit picky when it comes to that kind of stuff. ModNation naturally had a lot of bugs and wonky stuff that would happen, and Nintendo would have to make sure there's none of that to get it in the game actually.

Mario Maker and Halo Forge would argue that it's not so difficult to make an editor and you would get some good stuff (if they improve their sharing infrastructure). You guys are just over thinking what you would be able to do. You would likely be given set landscapes and then build the track on that landscape. At the least, you can make floating maps like Rainbow Road without a landscape.

Doing a grid-based 2d level in maro maker is on an entirely different level than doing tracks for a racing game.
@BlueSkies: Ugh, like 90% of Mario Maker courses are garbage. All people want to play now are levels where you don't do anything (automatic mario), "let's spam as many enemies as possible" or music levels. Thankfully things like the course finder on this site and the weekly GameXplain streams manage to highlight some of the great courses.
@GrailUK: The novelty of that could wear off. I think it's a safer move to continue to have rotating guest characters, and it's smart to have them as DLC-only because it moves dlc-packs and gives the game a ton of excitement post-launch.
