In terms of raw content Hyrule Warriors: Definitive Edition has more content in the form of the various adventure maps, but the story is, while alright, lacklustre for a Zelda game. The combat is easy to pick up and there’s so many weapons to pick out, and a wide range of characters.
Age of Calamity has a much larger focus on story and character, and the combat is much more strategic. But the side content is a bit lacking conversely, and of course granted it’s based on Breath of the Wild only, character diversity isn’t the best. But it’s a perfect companion to BotW for sure.

TheJGG is correct in their comment, I feel. I would go with HW:DE for 2 reasons.
1. All the DLC is included already
2. It runs better than AoC
AoC is not unplayable, but the performance is poor. I have actually put my AoC game on hold in hopes they will release a patch with performance mode (like FE:W).
I know you said you wanted a Zelda musou, but honestly Fire Emblem Warriors is superior to both in my opinion (I am saying this with 300 hours into FE:W, 100 into HW:DE, and 20 into AoC)
I would stick with Definitive Edition for now, and wait for a complete edition of Age of Calamity, which will likely be released for the Switch's successor (and with improved performance and all of the expansion content on the cartridge). I wouldn't be surprised if they release it as a launch title.
