Let's just be honest, the Mario Universe is essentially in flux, simply bending to meet the purposes it needs to for any given game. While some sub-series have their own continuity and lore, the universe as a whole has no concrete laws (or if it does, they're as flimsy as paper). Toads are simply the denizens of the Mushroom Kingdom and are fleshed out or highly genericized to suit the designer's needs. In some depictions of the Mario Universe, Toads have gender/sex. In others, they do not. In some, they are paper. It's best to not treat the Mario Universe as something with unified and consistent lore. With that said, when did mario go to egypt?

Whether or not Toads have separate sexes biologically, they clearly have different gender expressions. I miss the Thousand Year Door thing of toads having bangs, sideburns, and 'stashes that grow out of their mushroom caps.
