Mario was the best beginner character up until this entry, where his Down+B Fludd attack is only occasionally useful even to experts, from what I know. He's still good though. Easy to use if you ignore that attack.
Offhand, I would suggest Pit, though there are many good choices. His special moves are easy to use, and his recovery move (Up+B) is among the best, meaning that even if you're doing terribly at first, you should be able to fly your way back to the stage easily.
I find the two hardest aspects for beginners tend to be: 1) Learning how to effectively use special attacks. 2) Jumping back to a platform after being knocked off.
In both aspects, I think Pit stands out, though as you get better you'll likely outgrow him and his whiny taunts.
Samus and Fox would probably be good to start with, too. I know a lot of people start with Link, but I think his recovery (Up+B) is not ideal for beginners.

I think Kirby is one of the best characters for beginners. His flight makes it very easy to get back on the stage and he has some good variety in his moves. It's probably best to ignore schielding, doging and grabbing at first and focus on the basic moves (A button + direction and B button + direction) and the smash moves (A + hard direction) Then it's just practice practice practice and your fingers will learn what to do.
