Hardest: In no particular order, the Mega Man series, MMX2 especially because of the X hunter bosses, also The binding of issac, Super meat boy and Fractured soul.
Can't really think of an easiest game.
Hardest: Final Fantasy XI, due to the fact that it took forever to do anything, not to mention slow leveling of certain jobs. I did spend an endless amount of hours on it tho.
Easiest: Fantasy Life, for me the game lacked a challenge, but the co-op was fun!
Hardest: Fire Emblem Radiant Dawn, too many members of the Dawn Brigade are underleveled so as a result about half of the game is ridiculously hard (mainly early and middle of the game).
Easiest: Kirby's Adventure (NES), Kirby games are generally known for their easy difficulty anyway though it's still a ton of fun.
Hardest: Maybe Mario & Luigi Dream Team, on Hard Mode. That battle ring becomes brutal on harder difficulties, especially the 'don't mess up one counter attack at all' giant battles.
Easiest: Maybe WarioWare Touched. Or any Wario Land game's normal mode. The series is great, but its level of difficulty is generally minimal, with the one exception being Super Hard mode in Wario Land 4.
Hardest: Super Ghost and Ghouls. Like... omg... Dat tidal wave...
Easiest: New Super Mario 2? Which ever one that get's you tones of lives. I quit halfway through because I had over 50+ lives. Luckily the game was borrowed from a friend.

Radiant Dawn can really screw you over if you don't level the Dawn Brigade right (probably my main critique of that game). Especially since they give you Nilah and Dark Knight (TWO uber units) to soak up way to much of the EXP. I usually just focused on four or five units to make super powerful which actually worked out for me (I ALWAYS use Jill).
For me the hardest: any precise platformer with knock-back reaction. I just got done complaining about this is Shovel Knight. It's such a cheap way to die, and a dumb mechanic IMO. Shovel Knight in particular wasn't that hard...but I died a lot because of this one thing. Megaman 9 I kept bouncing off edges...and then having to replay most of the level T_T
Easiest: I think I agree with people on the Kirby games, they're usually mind-numbingly easy (besides maybe the final bosses)
Super Mairo Land 2 has to be the easiest game I've ever played I think. Or it depends, if beating the Champion in Pokémon is considered completing the game, then Pokemon XY, if not then Super Mario Land 2. As for hardest, it's a tough one. I want to say Super Mario 3D World, but only because of Champion's Road. I used to have a hard time with the original Super Mario Land, but when I finally felt at home with the horrible controls it became sort of easy, except for the tedious "you have to hit me 40 times" boss.
Toughest: Infiltrator (NES) or Bart vs. the Space Mutants (NES)
Easiest: Kirby's Dream Land (Game Boy)
edit: Toughest game that I've actually beaten would be Mutant Mudds (iOS) only because touch controls on a game that required that kind of precision was such a pain.
Hardest: Shadow of the Beast 2 on the Amiga, I couldn't get anywhere in it
Easiest: Outcast on the PC, great game but I remember being so disappointed in being able to kill everything in 1 hit (even the final boss) once I got the flamethrower weapon, made the game too easy and pretty much ruined it from then on once you'd got it.
Rimmer: "Look, I think we've all got something to bring to this conversation, but I think that from now on the thing you should bring is silence."
Homer: "Oh people can come up with statistics to prove anything Kent. Forfty percent of all people know that."
Hardest: not sure, maybe Metal Gear Rising Revengeance
Easiest: Pokemon Alpha Saphire. The games are becoming way too easy with every new entry to the series. And I don't like that at all.
The category is problematic for me. I think you should update it to easiest or hardest games that you were nevertheless compelled to finish. If I just took it literally, the easiest game would be one that was instantly forgettable and the hardest game would've been one that was so awful and unfair that I didn't bother finishing it. It's only really meaningful or noticeable if you still got something out of it.
With that said, my very rough nominations would probably be:
Easiest: FF9 - I don't think a single one of the mandatory bosses poses a challenge, it's only difficult if you go off the beaten path.
Hardest: Dark Souls - While it wasn't entirely, for the most part it just felt incredibly fair in how it challenged you constantly.
For toughest, probably Ninja Gaiden, Ghosts N Goblins, or Dr. Jekyll and Mr. Hyde. For the hardest game I've actually beaten, definitely Castlevania III: Dracula's Curse.
I can't think of the easiest off the top of my head, but Kirby's Epic Yarn and any of the Lego games are candidates.

Oh. Really? I mean on hardest difficulties, maybe. But why?
Probably because that boss hack in mission 3/4 dissasambeling guy. Or total BS Japan gardens level, where you have to stealth or else gorrilas with other guys will murder you. On hardest it feels unfair sometimes - especially with crappy stealth
Toughest: Altered Beast/ Super Star Wars
Easiest: Freedom Force vs. The Third Reich (finished it in two days and still didn't care, one of my all time favorites)
