You don't need to learn to like anything. Just because other people enjoy something doesn't mean you have to. Instead of wasting time trying to enjoy things simply because they're popular (or god fobid, simply because they're from Nintendo) play the games you personally enjoy.
What is it you don't like about it? The gameplay, or the atmosphere? Essentially, it's a twitchier 2D Zelda set in an oppressive, isolated, sci-fi setting. If you can't stand it, don't force yourself to like it. Just don't use your personal opinion as a reason to bash what is many people's favorite series, and you're fine.
Play one of the games. If it fails try one of the later or earlier games depending on which game you tried. If that still doesn't help, try playing them again in a few years.
I'd say try Super Metroid first. If you don't like that, try Metroid Prime. If you don't like that, I'm not sure what else the series could offer you in terms of gameplay options.
My first Metroid was Fusion and I feel it is a good jumping off point. It is more linear than most metroids but with plenty of secrets. It was also designed for a handheld meaning you won't be required to sink lots of hours into it before it hooks you. Plus it is on the Wii U Virtual Console making it easy to get.
People keep saying the Xbox One doesn't have Backwards Compatibility.
I don't think they know what Backwards Compatibility means...

You are better off not liking it at all than the situation I am in where I like the parts where stuff is actually happening but dislike all the messing around.

Freedom of the press is for those who happen to own one.
The NES game? That game has NOT aged well. Play Metroid zero mission, the remake of the NES game. Or any Metroid Prime game or fusion if you're starting out.
Let your intellect more fully apprehend the game itself without letting your will direct your intellect to only apprehend the perceived bad qualities of the game. Your intellect will apprehend the good and move the will to "like" the game. Unless you will the intellect towards some other end.

God loves you
Try Metroid Prime, that's where I started, and it is likely a good start for you too. If you have a GameCube get the original disc (which is cheap nowadays), and if you have a Wii you can use the GC disc or Metroid Prime Trilogy but I would still recommend the original disc as GC controls are better, and its a heck of a lot cheaper too, and if you have a Wii U, get the trilogy from the eShop, it's $19.99. But if you have a GameCube or an original white Wii I would very much recommend just the original disc. IMO GC controls are better, and it's physical and not digital which is pretty much just an extra extended rent.

Educated people wouldn't overuse the word intellect like that.

But you didn't say he was educated, and you didn't overuse the word either. Don't start doubting yourself.
If you don't like it it's probably just not your thing. And that's okay. Don't force yourself to try and like something you don't or play games you don't enjoy.
Ehh, personally I disagree. The only way I got to like Metroid Prime was to FORCE myself to play through the entire thing (even though I didn't initially enjoy it).
Sadly, I haven't been able to force myself through Super Metroid yet...so the jury is still out on that. So I'd say try REALLY hard to like it (maybe make it through one game like I did), and if you still don't, then it's not your thing.
I think I understand you OP. When I played the game It looked odd, and was annoying to play. However Metroid ( the art ) was this mysterious thing and then one day I met an person who had "METROID II" the return of Samus. I borrowed the game and played the living day lights out of it.
I would start from Metroid II ( as with myself ) then play the SNES game. I know the original feels bare BUT that is how it was designed like Kid Icarus.
......
The thing about Metroid is that you need to be immersed into the world before hand. Personally Metroid Prime is not the first game to play because it is not really an real game ( but as close to an 3d Metroid ).
If not try watching some Nintendo cartoons or comics that features Metroid.
The original story of Metroid was that Ridley was the primary creature of the planet and the pirates took over the planet and left only one alive. Samus was this person who grewed up with the Statue people, and dawns their skin as armor.
Nintendo really screwed up the story with the fusion game which in reality is just an rip-off the Aliens videogame ( no really play Fusion then play the Aliens arcade game
