Two games probably couldn't be called a franchise, but I'm still going with the Dementium games. To me, they are top notch experiences in terms of atmosphere and have been thought provoking games in terms of wondering how situations have unfolded throughout the settings.

Yeah at this point I'd probably go with Ace Attorney. Megaman, Sonic, Castlevania, Assassin's Creed are up there. Half Life more than any of them if you include Portal too(since they ARE in the same universe and all).

I'll say Kingdom Hearts. Yeah, I've had my ups & downs with the series, but still, it's low points are still good, while it's high points are fantastic.

I've also highly enjoyed Dead or Alive & SoulCalibur, but I've only played two entries each.
