I'm completely new here and have never owned a games console in my life. I'm just about to buy a Nintendo Switch for my kids aged 7 and 8. They have never used a console before. The 8 year old is visually impaired. He can see but not things that move very quickly. As such shoot 'em ups and racing games won't work for him. Please can you therefore recommend what I'd call slow paced strategy/discovery games.
I'd also like suggestions for games that get the kids physically moving (like the old Wii games used to).

Some slow paced games I'd recommend for kids are Pokémon Sword/Shield, Animal Crossing: New Horizons, Mario + Rabbids: Kingdom Battle, and 51 Worldwide Games (a collection of digital board games and minigames).
The most obvious candidate for a physical movement game is Ring Fit Adventure, which is fun but also
can be fairly intense exercise and it's quite expensive (though you can get it a bit cheaper now than you could when it came out) so you'd have to look into it to see if you think your kids would like it. There's also a game called ARMS which is great and can be played with motion controls (the age rating is 12+ but it's just cartoony violence so I think it would be fine).

Anyway I have some games suggestion for your kids based on their condition.
For your 8 years old kid:
1. Yonder the Cloud Catcher Chronicles (Everyone, PEGI 3) (genre = Adventure with Open World style, No violence at all, 1 Player) (Long game)
2. Overcooked All You Can Eat
(Everyone, PEGI 3) (genre = Cooking Party like Dinner Dash, can play until 4 Players, can use Assist Mode for newbie players) (Short game)
3. Wheel of Fortune + Jeopardy
(Everyone, PEGI 3) (genre = Quiz, can play Solo or Multiplayer, need some basic English words or knowledge from other things) (Short game)
4. Animal Crossing New Horizons
(Everyone, PEGI 3) (genre = Life simulation, only 1 player, No violence at all, 1 save data for 1 machine, need to subscribe Nintendo Switch Online Service for $20/year to use Online feature like visiting other people's island or inviting other peoples to your kid's island) (Long game)
Nintendo Switch games with movements like Wii:
1. Family Trainer
(Everyone, PEGI 3, compilation of 15 activities with movements like Wii version, can play up to 2 Players)
2. Ring Fit Adventure
(Everyone 10+, PEGI 7, Mild Cartoon Violence, can choose the gender and customize their looking, 1 player only)
3. Sports Party
(Everyone, PEGI 3, game like Wii Sports with normal people looking, can customize their looking, can play until 4 players)

Gosh, you explained too much about games genre to parent who have no experience in video games. 😕
And you mentioned the games from your age perspective.
I simply gave information about what games that suitable for 8 years old kid without explaining other games that not suitable for kids.
Some decent suggestions in here already. While I haven't personally played the following, Animal Crossing: New Horizons is a pretty chill sim game that's geared pretty well towards all ages. Same with Mario, though as mentioned I'd probably stick with 2D entries.
I should also mention that while Mario Kart 8 Deluxe qualifies as a racing game, there is a feature it comes with called Smart Steering. This keeps the player on the track and prevents them from knocking into walls or falling off the course. It's turned on by default, so you won't have to mess with the settings unless someone wishes to play with it disabled.
@Anti-Matter The parent's lack of video game experience is precisely what warrants all that text. To people like you and me who game regularly, this is nothing new. But if I were someone just diving into gaming for the first time, I would find that information useful.

I tried my best to mention the games from their genre that I thought maybe suitable for him, so I suggested some titles for casual gamers / kids with (almost) no violence at all as possible .

@Anti-Matter As @Snatcher mentioned, I didn't have an issue with your list; it was your unnecessary call-out of Ryu_Niiyama. While she gave a general rating range that the mentioned genres can be, keep in mind that there are at least a few kid-friendly games in most of those genres too. Really, that was a good angle from someone who has to deal with a visual impairment, though as with people, each case is unique. I can relate to being legally blind (Well, used to be), but I've never dealt with anything that glasses or contacts couldn't correct.
