I might be wrong but for me "Casual gamer" is someone who plays games but does not care about them.
They just play games to fill in time not to "experience" the game. Dumb games like Fortnite and Splatoon are prime example of that.
For me it has nothing to with difficulty setting or anything like that. I play games in the same manner I read a book. It is all about the experience and the casual gamer does not care about that at all. They just consume for the same of consuming.
I've gotten to the point where I think that I'm no longer a "casual gamer", simply because most weeks I end up playing over 10 hours of video games, and I currently own 2 consoles (with the Switch 2 hopefully being a third one soon). And I follow gaming news constantly. And I hardly ever play any mobile games anymore. And I don't play any of the major video game franchises except a few Nintendo ones, since I prefer to play more niche stuff. I'm still not the most studied core gamer ever, but I am heading into that direction. Nothing wrong with being a "casual gamer" though.
My top 5 favorite games:
1: Hyperdimension Neptunia Re;Birth1
2: Pokémon Violet
3: Super Smash Bros. Ultimate
4: The Legend of Zelda Link's Awakening (2019)
5: Animal Crossing New Horizons
