I don't read books like that but I've watched youtube videos like that and if I get a bad ending I go back to continue from where I the bad ending was and when I get the good ending, I go back and watch all the bad endings.
I read them and if I died or choose a bad ending I would just start over again. Even if I got a good ending I would start over and pick different from what I did the last time I read it.

When I used to read them back at the start of high school, I'd flip through and read all the awesome/gruesome ways in which the hero died, and then never bother to play the actual book.
Seriously I had like 8 of these books and I never played any of them properly. But all my heroes were squashed, drowned, impaled, driven insane, half-eaten, dragged to hell, torn apart and tricked into voluntary suicide. Sucks to be them.
That would require me to read choose your own adventure books in the first place, which would require me to read books before that, so ... I can't really answer the question.
