I'm Canadian so most of my NES games are Canadian. The biggest difference is that besides Game Titles words are written in French as well as English. Does this make them less valuable and/or desired by collectors?
I think they're about even in general, although some US-based collectors who desire all variants may actually consider them more desirable. I have a few Canadian-release carts (Adventure of Link in particular), including some Atari carts. I know for sure that Atari cart collectors might pay a slight premium for Canadian-version carts with the French text.
The value is from popularity to rarity. Meaning if it is an popular title many people will want it for some reason. If it is rarity then that is another story. More importantly is release place and CESORING/LOCALIZATION. I hate censoring but some things I will play still
