Yea, I mean - I was never a Metroid fan. I would rent Super Metroid all the time when I was a kid, but I never beat it and wasn't a fan of the backtracking and sometimes arcane puzzle elements (looking at NES Metroid, too, with hitting those walls five times with the super missiles or whatever). And I was off in Playstation land by the time the Prime games came out.

So Dread was actually the very first Metroid game I ever beat, and I loved (most) every minute of it. They did a great job of reaching "new" people like me and keeping me in the gameplay loop.

Famicom Detective Club is a good shout. Just adored them. I was hoping it would be successful enough to get some new adventures of enter name and Ayumi-chan. But I think Nintendo overpriced it.

Detective Pikachu Returns is a game I'm currently enjoying immensely. It's obviously pitched younger so its detective mechanics are very simple and it's hardly a graphical showcase, but I find it immensely charming and I really like this take on the world of Pokemon more than the normal cock fighting focus of Scarlet (I only started playing Pokemon this year).

Yoshi's Crafted World seems to get a lot of hate and I don't know why. It was fun and looked so cool.

Animal Crossing New Horizons is one that certainly feels like it. The simple joy of accompanying your villagers while they form a choir is very underappreciated. But that's the wrong sort of villager interaction apparently.

ARMS feels like such an obvious answer to this question that it barely even qualifies as an answer, but that would be my pick. It has a really fun and original gameplay concept and a great cast of characters, both of which have a lot of potential to be expanded on.
I also have a soft spot for 51 Worldwide Games (Clubhouse Games). It doesn't really push the boat out in any way but it's a very solid collection of board games, as well as a few slightly quirkier, more video-gamey minigames. Feels like a bit of a throwback to DS/Wii-era Nintendo, which I'm always here for.

51 ww games is a sequel to the ds game 42 all time classics but it adds a few wii play/wii sports games into the mix too although golf was much more in the gb/gbc style and shooting was waaay better in wii play 1 but dots and boxes is fun

Famicom Detective Club was great. I enjoyed the two remakes quite a bit. I do wish that the 8-bit/16-bit versions could be added as a bonus, but I'm glad that I was able to experience the games as it is.

I feel that Paper Mario: the Origami King is underrated. I really found everything about the game to be a lot of fun. The graphics are great, there's a lot of variety in gameplay and places to visit, and I personally loved the combat system, with boss battles being my favorite part.

@Servbot_EJ TOK is a good mention. Loved that game, but people really dunk on it just because it doesn't happen to be an RPG.

Second favorite after TTYD to date.

Kirby's Dream Buffet is a really solid little spinoff game that is not really talked about much anymore. Charming dessert courses and fun competitive marble-rolling gameplay with that Kirby twist of power ups, and a nice amount of unlockable skins, costumes, and music tracks from across the Kirby series.

Ring Fit Adventure, Super Mario Maker 2, and Luigi's Mansion 3 are other ones off the top of my head.

For me...

Kirby Star Allies
No, this is far from my favorite game in the series and it still had some miles left to reach that pedestal, but I had a blast with this still and the numerous amounts of fanservice and callbacks (alongside the Helpers system, which I wanted to see return since Kirby Super Star) made this entry a "thumbs up" for me to go alongside Kirby's Return to Dream Land, Kirby: Triple Deluxe, Kirby: Planet Robobot, and Kirby and the Forgotten Land. I'd even go the extra mile and say this game is much closer to the "Super Smash Bros Ultimate" I wanted in 2018.

New Super Mario Bros U Deluxe
It may feel "stripped-down" without the Boost Mode or offline help videos, but it still gave me great times regardless and the addition of the New Super Luigi U DLC makes this well-worthy of its $60 price tag for me. I even like this game more than the recent Super Mario Bros Wonder, which I thought was "decent" (at best).

Animal Crossing: New Horizons
The tool durability is definitely "pointless", but this one felt actually new to me compared to the previous three mainline entries (all of which I felt were simply "DLC add-ons" to the mainline formula without doing much noticeable changes, especially Wild World and City Folk) and being able to seamlessly customize more than just your house and patterns is something I wanted to see for a long time.

For me:

Game Builder Garage - so many possibilities in this game. I hope Nintendo makes a sequel and advertises it more.

Kirby's Dream Buffet - honestly just a great racing game that is primarily hurt by lack of humans to race against because not enough people play.

Bayonetta Origins - Just a beautiful well-made game that kind of got ignored after a brief surge of interest.

Big Brain Academy - One of the best family/party games on Switch and deserved more recognition.
