I've downloaded the demo and created a save. Same thing even though I've progressed a bit in game until i can manually save, the MH spirit was not unlock in SSBU.
I'll try again this Friday when the Rice Sakuna event is launched. If still not unlocked, guess Nintendo has included a special check against demo save data and we gotta wait for another few months to complete the spirit collection
