I believe it's a special move where you press the A button when performing a punch or something. I used to have the game, but I can't remember how to do it exactly (though it was pretty easy to do).

The finishers are mostly random I say mostly because you can perform a throw finisher by pressing A and a cruesome chainsaw move by pressing B. I believe that Jack will rip an oppenent's heart out with a chainsaw finisher at random You can also perform different finishers with different weapons (example: slashers = spine removal)

The kind of move that's used to kill someone is determine by the situation the two of you are in. Depending on whether the guy is laying down, standing up, or in the air, a different move will be used. The kind of weapon used also determines what move is initiated.
