I'm having a problem figuring out what the difference is between Ghouls and Ghosts (Genesis/MD) and Super Ghouls and Ghosts (SNES). I was watching some videos of the gameplay and I thought someone said that the Mega Drive version is a port of the arcade game whereas the SNES is its own stand-alone game. Is this true?

The difference is quite simple. They're both different games. Super Ghouls'n Ghosts for the SNES isn't an improved port of the Arcade/MegaDrive original, it's a game all on its own. SGnG is the sequel to GnG; while GnG was ported to the MegaDrive from the arcade game. Unfortunately, the intro from the arcade game got removed in the MegaDrive port.

Some of the horrible frustration also got removed...
The Megadrive has a practice mode that lets you continue from a boss if you lose at that point, whereas the arcade sends you back half-way through the level!
As StarBoy says, quite different games - the SNES game is all new and mixes visual elements of both Ghosts 'n' Goblins and Ghouls 'n' Ghosts with flash graphics, improved sounds, locations and a double jump. Its still madly difficult though...

Super Ghouls'n Ghosts, imo, is better than Ghouls'n Ghosts. In fact, SGnG is quite easy compared to the original. But I still love it! <3

Maybe its as I played the Megadrive back in the day and had more patience in my youth
They're both really good either way.

They are both different games. Both are good and both are very hard. I slightly prefer Ghouls and Ghosts

Well that settles it then. I thought they were essentially the same game, so I held off on buying both. I've had the SNES game downloaded on my Wii for the past year, so I think its time to get the Genesis game now. Thanks fellas!
