Hi, I noticed the health and safety message that appears when booting up the Wii has yellow letters instead of white ones. Is this normal for component cables?

You should make sure the cable is connected properly.
Just checking color combinations in MS Paint, getting yellow instead of white is a sign that the blue signal is missing. (in terms of RGB encoding, green+red = yellow, all three are needed to produce white)
