Why not? My brother and I played All Cup for days trying to get the highest Rank. It was so much fun. I wouldn't mind having it again. Not sure if they should allow it to be played online but I think it would be very fun for single-player.

Yeah I played through it with both my older brother then with my cousin, fun times especially switching constantly while driving to increase the challenge.

Why not? Don't get me wrong, I loved Double Dash (I still have it to this day) but from my personal experience, All Cup worked best with Double Dash (and probably only Double Dash) because of how many tracks were there. Since All Cup includes all cups, having it in MK8 means that all 32 tracks would have to be played. That would just be too long of a gameplay session for myself. The best alternative to All Cup was in MKWii. You can easily set the 1P VS/multiplayer options by having the number of races you want (2/ 3/ 4/ 5/ 8/ 10/ 12/ 16/ 32) and by setting the course order to In Order. That way you can start with the Nitro/Retro Cups from start to finish. All Cup is better as an option rather than a cup on its own.
Plus, I don't see it happening online, unless you're given more freedom over how many races you want.
IMO, playing All Cup mode is fun, but as an only child at the time I got Double Dash, I found it more fun to do All Cup mode alone rather than with my friend since All Cup takes a lot of time (and I never had a lot of time to spend with my friend).

Only? Today it's like at least 3 games combined without dlcs
I hope it lets you choose. I'm not against the team battles in MKWii, but it didn't let you choose between teams or free-for-all when you were online. That sucked.

Well, Nintendo does a very good job of compressing their games, keeping them very small. SM3DW was only about 1600MB, and look at all the content that game had.
I'm guessing it'll be a few gigs in size at most.
I'm more worried about the new Super Smash Bro's, really. That could easily be 25gigs or something. 0.0
