Use imgbb.com to upload your photo so we can analyze your problem with Save data on Gamecube.

Make New Save data then overwrite the Old Sava data with New Save data.
If there are other's name that means you continued the last Save data from previous owner.

Those are just the default scores the game starts with, not a previous user's scores.

@TheJosh347 Next time, please give all the information upfront when creating a topic here. We had to drag all the information out of you. It would be more efficient to explain a problem such that we can solve it. We still don't know what you meant by a "bunch of games" that have this problem because you only mentioned one after a lot of questions..

I had this same problem with Destiny 2, when I first booted it up there were already 3 characters saved called Hunter, Warlock and Titan and I couldn't delete the data

@Anti-Matter it was a joke as those are the 3 preset character classes you choose from.

You don't erase old save files, you the load up the save files and try to figure out what kind person the previous owner was.

I think those are default high scores from beginning. The scores that given by developer from beginning.
To overwrite those scores, you have to get better scores than those names.
Btw, why did it bother you ?
It just a random name, you can overwrite them with your better scores.
