Sonic: Was a huge fan of Sonic when I was much younger, so I picked him up back in Brawl as a result. Moveset isn't perfect - it's sorely missing Boost as side special - but I've stuck with him since because I enjoy playing him (aggressively and not campy, mind you).
R.O.B.: Kinda just picked R.O.B. up one day and thought he was pretty fun, nothing really to it
Terry: This one surprised me because I'm not a huge fan of the Street Fighter characters, but Terry is really well-designed and fun overall
Lucas: I tried out Lucas since one of my old friends played him in Smash, and discovered he's very enjoyable
Steve: Minecraft was another big part of my childhood, and Steve ended up becoming my most-wanted Ultimate character. So playing Steve reminds me of the satisfaction of seeing him make it in, but I also like playing a lot of the technical characters (generally less frequently than my mains) and thus I click with Steve's playstyle too.
Lucas is my absolute main because of his ability to mid-air combo and I love the PK freeze
Bowser Jr. is my second because he hits hard, has ok dodging, and can set up combos
Lastly, I have Mewtwo because he is light and hits quickly and hard
Games I'm playing right now:
Tears of the Kingdom - Switch
now that I see your explanations, I feel like I didn't put enough info: I like Corrin because side special is VERY fun to use, and up air is really funny to use when your opponent is coming back down to the stage. Down special (Counter) IS also really fun to punish your enemies with.
I haven't played Smash Ultimate in quite some time, but I usually like playing as Mario or Captain Falcon. Mario because he's always been my favorite character of all time, and he has a well-balanced moveset. He's reasonably strong in many cases, plus I like his up special. Captain Falcon since he's the main F-Zero character and has a great balance of speed and power. Plus it's immensely satisfying to KO your opponent with a Falcon Punch. Also, although I'm not the biggest Fire Emblem guy, I like playing as Roy too. Despite having similar movesets, I actually prefer him over Marth since he's more powerful.
My Smash mains are:
Kazuya, Banjo & Kazooie and Sephiroth
Reasons:
Kazuya - Huge lifelong Tekken fan since Tekken 4 and a huge fighting game fan in general
Banjo & Kazooie - Not only they were my most wanted character for Smash, but I am also a huge fan of the Banjo-Kazooie series
Sephiroth - Even though I am more of an FFX fan than FFVII, what I will say, is not only do I love Sephiroth as a character but his playstyle as well and since then, Sephiroth is my favorite FFVII character and I am a huge fan of him

Wii Fit Trainer: Her playstyle just clicks for me and I love how ridiculous she can be, with her hitboxes to her combos and her damage output. I couldn't imagine maining anyone else.
I usually end up playing as Samus. Her moves felt very true to the actual Metroid games, which I had spent a ton of time playing before ever picking up Smash, so I feel the most at home with her.
Otherwise, I love playing as Snake. I'm no good at all with him, but he's one of the few I flat-out enjoy playing.
Kirby definitely.
I mained him because he’s essentially the main protag of world of life and I got good at playing him.
Also because I’m a massive fan of Kirby. (Heck I think my Kirby amiibo is my strongest one.)
Gonna update my list with a few characters that I've picked up since:
Sora - I think Sora's floatiness is a big part of why I enjoy him, as I think it's made him click for me better than many other characters have. Very fun moveset, too
Duck Hunt - Again, I like the more technical characters, but I also gravitate towards Duck Hunt because I have a soft spot for the original game, as basic as it is, and basically no one else plays him. Using other attacks to manipulate Trick Shot is incredibly satisfying.
Hero - I just enjoy the element of randomness Hero brings to the table, but I don't play him that seriously. Just think he's dumb fun, though I do like his general moveset a lot regardless
Ness. I've main'ed him since I unlocked him on the original Smash Bros. In that game he was the final unlockable and had an OP throw (all throws were OP in that game TBH).
He's not been so overpowered in any of the games since but I've stuck with him because that jump arc and the powerful backwards down aerial kick give him a lot of varied ways to cover stages in the air. He also has the bat which is slow, difficult to land and leaves you vulnerable but which offers a reliable way to KO.
And of course if you can master the very tricky (but skill based) PK Thunder recovery then that hits just about as hard as any move in the game and makes him difficult to edge guard against.
