I'd say all the Wii U ports (including BotW). A big part of Switch is essentially being able to do what Wii U did but better. You want to play in handheld mode? On Wii U there's off TV play but the connectivity range is rather small and the screen isn't that good whereas the Switch you can take anywhere and has a very good screen. Want to use motion controls? On Wii U you have to use the Gamepad, whereas for Switch you have the choice between the Switch itself, Joy-con and pro controller.
I'll be interested to see how well Captain Toad works when it launches in July.
I think the upcoming Pokemon Let's Go: Pikachu and Pokemon Let's Go: Eevee are arguably the "switchiest" of Switch games. While games like Zelda Breath of the Wild and Mario Odyssey are excellent, IMHO they don't show off all of the Switch's features as well as the upcoming Pokemon Let's Go games do. Here's a list of what the Pokemon Let's Go games do:
Let you play docked, tabletop, or handheld
Take advantage of motion controls in Joy Cons for throwing Pokeballs
Take advantage of HD Rumble for making it feel like you're throwing a Pokeball
Take advantage of the on-the-go and home multiplayer appeal of the Switch by having "drop in, drop out" co-op multiplayer with each player having one Joy Con
Connect to other Switches nearby for local trading and battling
Connect to other Switches online for local trading and battling
Utilizing the Switch's Bluetooth connection to connect to Pokemon Go
To be fair it is difficult to say one game is the "Switchiest." I think a game that is more than a collection of mini games (sorry 1-2 Switch) and has substantial content, emphasizes multiplayer on the go with each player holding one Joy Con, and is playable well whether in tabletop, handheld, or docked can be considered a "Switchiest" game.
(Side note: @JaxonH the fact that the Pokemon Let's Go games are arguably the "Switchiest" games so far (see above) may be why you really like them compared to other Pokemon games, as you're a big fan of the core system concept itself.)
@shadow-wolf That's one way of looking at it. The thing is, there's more than one answer to that in which there's not just the local multiplayer games that take advantage of single Joy-Cons, but also the big console games that can be taken on the go. The same console that has Snipperclips and Golf Story can now play BotW, Xenoblade 2, and Doom 2016, games that you think are best for a TV/monitor than handheld but still work extremely well there.
It's whatever you want it to be, so there's really no right answer. Whatever the "Switchiest" game is for someone depends on what they value the most.

Obviously there are no right answers.... but I just think of the original reveal trailer for the Switch itself. The most Switch like thing you can do is take the game to a rooftop party and play some games. That's why I think the Jackbox games are the most Switchy Switch games. Arms is close but it doesn't really have the same sort of instant mass casual appeal. BotW does the other very Switch thing of being a huge game on a portable but it's always a single player thing.
With that said, Snipperclips or the New Pokemon game do fit that space pretty well also

Final Fantasy XV is the Switchiest game (ok, not actually on the Switch...)
It's ambitious enough to make you wonder if it is coming to the Switch, indeed, if it can run on the Switch. And it is old enough for the folk who own everything to scoff at it's potential release.
Also, Resident Evil Revelations has motion, reloading gestures and local wireless MP. That's pretty Switchy

@EvilLucario That’s a good point, I forgot about the whole aspect of bringing console games on the go. So you are right in that aspect, it’s all subjective. @JaxonH I’m a fan of the core games and even I’m excited for these games because of how much of a breath of a fresh air they’ll be. As they are meant to be the best entry point for newcomers, hope you enjoy them! @gcunit lol. Well technically OP never specified it had to be a game released yet ...

Do I really have to add a "this is my opinion" disclaimer to a post in a thread that explicitly asks "what game do you feel defines what the Switch is all about?"
There's A LOT of space between there's no way it can be the Switchiest game when it plays EXACTLY the same on the WiiU and this is my opinion, without sounding disrespectful to people who don't share your opinion.
@shadow-wolf I don't want to agree with you on account of the fact that I'm probably not going to buy the Let's Go games, but these are all excellently argued points.
@Maxz Thanks! I'd recommend you at least watch the E3 Treehouse streams of the gameplay and see if it's worth a shot. I think they'll be a nice breath of fresh air, especially since now I can enjoy these games without fearing the future of the franchise.
