Which would you pick? I think my top picks would be
Hollow Knight (Favorite game ever and I could replay it for ages) Tears of the Kingdom (incredible exploration, unlimited creativity, fun combat, great puzzles) Pikmin 3 (favorite campaign in the series, plus the challenges add a ton of replay value)
NOTE: If Silksong ever comes out on Switch, that will likely knock Pikmin 3 out of its spot though.
HONORABLE MENTION: Dark Souls Remastered. I've played that game for hundreds of hours, and Switch was responsible for introducing me to the series. However, I much prefer Dark Souls 3 and have played the first game to a point where I don't ever care to play it again
HONORABLE MENTION: Bowser's Fury. It's a short game, but man is it fun and replayable!! Honestly up there with Mario Galaxy 2 as my favorite Mario game ever.
Assuming collections like Super Mario 3D All-Stars don't count, I'd choose (also I won't choose any of the games from NSO):
Paper Mario: The Thousand-Year Door (Has a lot of replay value, large amount of content, consistently has unique gameplay)
Pikmin 2 (I wanted to potentially choose a 2nd Pikmin game, however this one is my favorite, so I won't choose another Pikmin game for the sake of variety since I can only have 3)
Super Mario Maker 2 (Pretty much endless content, always fun making and playing levels. A good multiplayer game as well)
3 games? Most games I get tired of eventually, even ones I play a ton like Animal Crossing or Pokemon. hmm...
1. Mario Maker 2 - it is infinite.
2. Maybe PICROSS S+? With all the DLC it has like 2,000 puzzles.
3. Mario Kart 8 Deluxe - I don't actually play this too often but if I had very few options I feel like it's a game that I could play more and not get sick of.
I'll have Fire Emblem: Three Houses, Tears of the Kingdom and Xenoblade 3. They're all huge games with a ton of side content that have already kept me busy for the thick end of a thousand hours between them.
This is a really tough one. Do I really have to pick just three games? I guess I will go with...
1) Mario Kart 8 Deluxe
2) Super Mario Bros. Wonder
3) Splatoon 3
MK8D was the easiest choice for me, especially with the DLC. It's a game I can hop back into anytime and still have fun with it. Many of my favorite courses from the Mario Kart series made it into the DLC as well, and I got some new favorites from it too, such as Merry Mountain.
I could also have Super Mario Odyssey and Animal Crossing: New Horizons take spots 2 and 3, and I'd still be happy. It goes to show how much I like the Switch... it might just be my favorite console overall.
Currently my answers are very predictable. I have very many unplayed/underplayed Switch games that I'm confident are fantastic, but if I could only own three right now then I think it would have to be (alphabetical order):

Mario Kart 8 Deluxe
The Legend Of Zelda: Breath Of The Wild

Assuming no other systems exist:
1. Persona 5 Royal
2. Fire Emblem Three Houses
3. Super Mario Odyssey (although ask me on another day and it might be TOTK...)
If I have access to other systems, I'd drop Persona and replace it with Tears of the Kingdom.

i debated abt putting splatoon 3, but sadly the online will be taken down someday, and even though the story campaigns are absolutely spectacular, i wouldnt want just that
