Shantae was released as a standalone title via Limited Run Games. It has yet to be shipped, however, and it remains to be seen whether it will receive a digital release (which it most likely will).
There was also Super Rare Games's physical edition of Toki Tori Collection, which included the Game Boy Color game on the cartridge. I do not have it myself, so I cannot say whether it is exclusive to the physical edition or whether it is also included with any of the downloadable Toki Tori releases.
I absolutely love GB/GBC games though, so I tend to buy such releases, though I did skip Collection of SaGa as it has apparently been censored due to "evolving cultural/social norms". To hell with that.
The Neo Geo Pocket Color games are very much like Game Boy Color / Super Game Boy games. They feel and look similar to the Game Boy versions of good ports like Samurai Shodown.

I think Squidlit, Save Me Mr Tako!, and Pirate Pop Plus were made with Game Boy limitations in mind, while Awesome Pea 1 & 2 and Gunpowder On The Teeth feel like fake attempts, but if you're ok with that you can also check out Super Life of Pixel. There are a couple others like Dogurai and Warlock's Tower that I haven't tried yet.
