Recently my friend bought this external hard drive which unfortunately wasn't compatible with his Wii U. Therefore most of his data got deleted and he returned the hard drive. We both play some of the same games and therefore I was wondering if it would be possible for me to copy some of my data to his Wii U? We tried with a USB but since we have to format it, it will delete the save data.

Unfortunately there is no way you can help your friend, hard drives are locked to the single Wii U that formatted them when installed. As you already saw technically an hard drive can be attached to another Wii U, but that imply to format it for the new console.
In general, there is no way for copy any save datas between systems.
