The last boss in Metroid Prime 3 was RIDICULOUSLY easy. I didn't even dodge its attacks very much. I thought it was only the first form once I beat it, and then when I figured out I won, I was like "that was it?"
For me Deathtoll at the end of Soul Blazer was a complete joke. All the bosses had gotten gradually more difficult leading up to him and then he was a mammoth letdown. Just far to easy for an end boss.
Sorry guys but this one wins. No boss can possibly be easier seeing as you never even fight it.
Thing is, if you never fight then he's neither easy or hard so it's not really an applicant for easiest boss.

I nominate the Golem in Sandopolis Zone, Act 1 of Sonic and Knuckles. All you have to do is keep jumping in the quicksand, and the big idiot will jump in after you and kill himself. The only problem is figuring out that that's the only way to kill him, since he'll appear to take damage from normal attacks but can take infinite hits without dying.
Another really easy one is Wispy Woods at the end of the first level of Kirby's Adventure. Conveniently, there's a needle enemy shortly before it for you to take its power, then you walk right up next to it and spam your needle attack to kill him in about 5 seconds.
The final boss in Sonic 1 is another final boss that's about the easiest boss in the whole game.
As for Sonic CD, not all the bosses are easy, as I thought the race with Metal Sonic was pretty hard. It took me quite a few tries to beat that one.

Gi Nattak - Final Fantasy 7, the video is pretty self-explanatory. But basically the boss is undead, and phoenix down does wonders on undead creatures. [youtube:UIHRNEWOqcM]
That's the easiest one I can come up with at the top of my head, doesn't come much easier than a one-shot.

I'd have to say Dracula in Castlevania II: Simon's Quest. You can whip the crap out of him while he's raising himself from the dead, and kill him before he's fully raised.
[sigh] I do agree about Deathtoll being an easy final boss in SoulBlazer, but I do find it enjoyable (even when I know his pattern). The final confrontation against Captain JAS Hook in SNES Hook is also very easy, once you got the pattern figured out. Dracula's final two forms in Akumajou Dracula X Chi no Rondo is disappointingly easy, I can defeat him as both Maria and Richter without losing a life. I never once lost against Lavos' second form in Chrono Trigger; the third form, on the other hand, ...
