Depends if it has boring collectables (I hate collectables unless you get them as a by product of a perfect run of the level). If it does then I get the minimum collectables needed to unlock all the content.

Most of the time, no. I very rarely do. When I was younger, with less responsibilities I did this a lot, but now with a wife and two kids - unless it's something that my whole family plays, I don't get to do 100%. Plus, I play a large amount of games from all platforms... so staying to 100% makes it harder to start on something else. I do, however, beat almost everything I play though.
Rarely. If I'm enjoying a game to begin with, I always make an effort to beat the main campaign and a large number of the sidequests/levels that aren't required to finish it, but I'm not going to force myself to play through hours of monotonous or frustrating additional padding just to say I 100%'d something.
Any time I run into that quest to find the 100 lost artifacts/medallions/gold spider tokens/bananas/whatever scattered throughout the world, I usually just accept that I'll never find all of them and move on to something I will find enjoyable.
If the reward for completing the game is felt non-essential to truly enjoy the game or is just plain tedious, then I won't be likely 100%ing it. For example, the criteria for Mario Kart 7's golden kart parts are simply just about grinding for coins, but they are useless anyway because it's just not worth the struggle. On YouTube, The Completionist rates which games are worth completing it.
In the past i was able to play 100% but now i don't have that patience anymore. Been there done that kinda feeling i have right now with games. To keep me getting back a bit change in gameplay or for some gamerpoints.
10 years ago and later, I would of said yes. Now a days, I can hardly reach the end of a game without moving to the next. I'm not sure if it because my interest/ attention gets shorter as I get older or because I have too much freedom in buying whatever, whenever I want with my money.

I usually try to "100%" Zelda games.
I also try to do it in games I've had for too long without beating to see if I can eliminate most back tracking so I won't run around aimlessly later.
But not MUCH else, unless it simply happens after playing too much.
