There was a 2D Zelda OOT project in the works (not official) but, sadly, the guy who was making it died. Something like that would have been great to play: a re-mastered OOT suited for the DS.
The DS could manage it for sure. Maybe go the SM64DS way and have extra levels & co-op, giving some of the games more important NPC's a chance to shine. I'd buy that.
the big thing about RPG remakes for the DS has been added cutscenes (though that aspect is only huge for Chrono Trigger if you never played FFChronicles for the PSX, where those animated scenes were first added), touch-screen controls, which I don't use when buttons are available to me (omg Phantom Hourglass killed my hands; i know it wasn't a remake but i was still wishing so hard for the option to use buttons D: ), and added content... between OoT and OoT: Master Quest (which was already released for GC), other than some updated textures (a la Mario 64 DS) and unfuzzed details (seriously, go from playing TP to OoT on the VC, holy crap is OoT fuzzy! D: ), i honestly wouldn't want to see anything changed or 'remade' about the game, and so a remake of OoT for DS would hold little appeal to me.
in short, I like OoT just the way it is, and there would have to be something absolutely freaking awesome about any remake for me to bother with it.
