So long story short, my mother thinks that all video games look just like the box art for red faction guerrilla Re-Mars-tered. (It's actually a really good game, to be honest. I'm just using this game as an example.)
I want to show her that "No, not all video games are like that cover, it's just that those are the kinds that usually sell well and get the marketing budgets to match." Only problem is that there's loads of video games out there that aren't like that aforementioned box art at all, and while that may sound like a good thing, I seriously have no clue where to start. It's gonna be a lot more complicated then just showing her Undertale, simply put.
So if you have any advice on how to show the unconverted that there's loads of different kinds of video games out there, they just don't have the kind of marketing budgets all the video games that get commercials on TV get, please put them here.

Games are more like movies or books. The old adage of don't judge a book by it's cover, which I'm sure she doesn't do.
Youtube videos spanning some various genres, settings and varying gameplay. You can go from horror to action to farming sims to whatever. The range is huge, I daresay moreso than movies.
It's a medium for storytelling, just far more interactive than others.

A lot of first party Nintendo games are different than the “generic shooter” so you should show her some of those. An example would be the Mario series which are beginner-friendly and have a lot of creative mechanics.

Switch FC: I don’t know! Just type in random letters/numbers and hope that you get OctoKing!

Two words:Animal Crossing. Show her that.
My mum didn't really understand games other than Pokemon that she helped me with as a kid. As for modern tech, she can barely use a TV remote, but she managed to play Lew Leaf and New Horizons once I taught her how to use the consoles (and get very hooked on them)
It's also about as far away from violence as you can get.

Steam show her shadow of colossus, then cuphead, then animal crossing like he user above said, and then a rpg of your choice, I would go with something like dragon quest. All different genre of games.

@Willax If your mom is like mine, I think a mom saying "video games look the same" could be code for she doesn't like them, and wants nothing to do with them.

When we gave my dad the controller on Forza Horizon 5, we told him to "floor it", "do whatever you want, have fun", "you can't hurt anything", but he wouldn't. He was just like a deer in headlights. HE's seen my brother and I drive through fields, trees, off cliffs. But my dad just piddled around timidly at like 30 mph, and then he didn't want to hold the controller anymore.

Those peoples are probably flat Earthers who refuse to embrace the video gaming world.
They might think video gaming is a crazy hobby for coo coo crazy peoples and those elder peoples who didn't live in modern technology still persistent with their archaic mindset or probably they have some xenophobic mindset, they refuse to embrace something new.
There is nothing to convince those archaic mindset peoples, they will live in believing video games are crazy hobby and not even for them who have dignity.
If they want to believe video games will never fun for them, just go for it but don't let them tell you to not playing video games just because they hate video gaming hobby.
My advice, don't convince them if they clearly shown disinterested in video gaming world.
They want to believe video gaming world is crazy and not fun at all for them, just let them believe in their archaic mindset.
But for us, the video gaming hobby must go on, don't let them stopping your passion in video gaming.

Can you get her involved? Get some sort of slow paced puzzle game on the go and ask for her help on some of the easy levels. Something like baba is you, chess puzzles, something like that?
